I know I ought to cut out or drastically reduce carbs to lose weight but I really struggle to let go of the meal planning with rice/pasta etc. I love love love rice and could give everything else I up, I reckon. Actually I love love love toast for brekkie also and struggle with the thought of losing that also.

What was your first low carb dinner that you cooked yourself? How was it? How did you feel after you had it? Did you go on to keep cutting the carbs from your plate?

I lost 3 and a half stone doing a low carb diet. Always had porridge in the morning and cut out carbs after 1pm.
My favourite meal was roast chicken and loads of roast veg, never felt as though I was missing out and always threw in a couple of roast pots for ds and dp.
Other meals were stir frys, soups and salads etc.

Sorry I should add, that you don't have to cut out toast in the mornings, switch to brown bread if you don't already eat it and try to have some protein with every meal.

I always have brown - hovis or allinson. I try to have eggs regularly but am scared to eat eggs for breakfast everyday, seems unhealthy somehow.

So did you have pasta for lunch ever or rice etc? Did you find it effective to cut carbs from only dinner?

I usually had a baked potato or pasta for lunch, unless I was running late (after 1) . The thing with carbs is that you need the energy so by eating them in the morning/lunchtime you still have the rest of the day for burning them off.
I agree with the eggs thing, don't eat them every day. You can get your protein from yogurts/low fat cheese too.
The other key points are trying to eat something every 4 or so hours to keep your metabolism going, this can just be fruit or something, and try to eat breakfast within 30 mins of getting up.
Watch out for hidden carbs though, melon for example and bananas are difficult to digest so only eat them in the mornings

I've sent you a private message. I have a diet plan which I followed which really helped. It has some meal ideas etc. my email address is in the pm if you want it.

When I start low carbing I have eggs and bacon or a big omelette as this feels me up for hours. After a couple of days I introduce more lean protein and ditch the bacon as by then my body has more or less stopped missing the carbs.
It works- I lost a third of my body weight last year.

Sorry fills me up not 'feels' me up!

Eggs are fine for every day, if you want to. But you can eat anything for breakfast - it doesn't need to be 'breakfasty' food. I have full fat Greek yoghurt with berries, a fry up (weekends) or a protein shake.

You don't need grains/sugars/starches for energy. Your body can quite happily find enough energy from protein and fat sources. But if you really want to, porridge might be an option.

If you keep eating bread and (most) fruit everyday you will continue to raise your blood sugar, though, and that sugar will continue to be stored as body fat.

In answer to your OP the first time I felt I was properly eating low carb was when I cooked slow roast pork belly, celeriac dauphinoise and green veg for dinner one night a few weeks ago It was completely delicious, totally low carb and very indulgent-tasting!
