Advice please - a low carb-ish life! Will it work?

I have previously lost 2 stone on a fairly strict Atkins style plan. All the time I did it, it worked but I find it increasingly hard to stick to and so the weight crawls back on. I'm now nearly back to where I started. I think I'm at a time in my life where I want to FEEL I'm eating healthily and I can't face a high protein, fruit-free approach to eating.
So - here's my plan. Cut out the big bad five; pasta, bread, rice, potatoes and wheat BUT eat fruit, yoghurt, low fat meat, chicken and lentils. I LOVE vegetables and salad so no problem there.
Will this work - albeit more slowly than a carb-free life?

Foreveronadiet nuts and seeds are ok, but can be hard to digest their nutrients as they are bound by things like phytic acid and lectin which mean they can pass through (as it were) relatively undigested so they can germinate in the ground as they are designed to. Plus they can bind other minerals to them in your gut. It is better to soak or sprout nuts and seeds as this starts to break down the phytic acid, however you still won't be able to access the majority of potential nutrients.

Butter, coconut oil, avocados, animal fat, unheated olive oil are all easily processed by your body and increase the nutrient density of vegetables when eaten together.

Low fat dairy is not that great simply because of the way it is processed and skimmed milk powder is often added which is highly industrially processed. Eating full fat dairy is better as the fat will lower the glycemic load from the lactose.

Lower carb, but not as strict as Atkins can definitely work.

I have now lost over 4 stones on a low carb diet plan, but not as strict as Atkins. I eat the occasional apple, snack on a handful of nuts, have no more than a couple of dark rye ryvita per day, maybe with with a boiled egg for breakfast or peanut butter, Boursin or houmous for a snack.

I eat tons of salad and green leafy veg. I drink a couple of cups of black coffee per day, couple of cups of green tea. Cook for the family and eat the same, except for no carbs, e.g rice, bread, pasta.

Never eat porridge for breakfast, as I find that I am always starving hungry soon after if I do, but a boiled egg keeps me full for longer.

I don't really count carbs, but I would estimate that they would be around 40g when I was losing and I now try to keep below 100g of carbs for maintenance. The average daily carb consumption per person in the UK is 250g.

Have a couple of squares of 85% dark chocolate as a treat.

I only eat yoghurt and cottage cheese, so no skimmed milk powder added.

I grind my seeds as yes otherwise they pass right through!
