Looking for recommendation for books on eating a balanced diet and the 'science' of food (inspired by recent thread)

I would really appreciate any advice on books about eating a healthy, balanced diet. I think I know the absolute basics but I want to find out about the ?science? bit and the more recent research.

I?m hoping that this might help motivate me to stop wanting to eat unhealthy stuff and to understand what a balanced should be., plus which foods are the real baddies

I know the very basic stuff but I often catch snippets of really interesting information like the effects of artificial sweetners in food, eggs now being healthy foods, negative aspects of soya, palm oil, importance of various minerals etc. etc.

I have had a google but some of the books seem a bit ?faddy?, or are trying to sell a particular type of diet plan IYKWIM?..

Can anyone suggest anything that might help? I would especially love something that is available as a kindle version.

James Dugan Clean and Lean Diet -this book just makes sense.

I wholeheartedly agree with QueenStromba. In fact, any of Dr John Briffa's books (and his blog) are worth a read.

He reviews a lot of research and scientific data, but writes in a very engaging and accessible way.
