Is there a simple diet out there for a very busy mum who is a sh*t cook?

Everything I look at seems so complicated! I just want something easy with food that can be heated up or thrown together in 15-30 mins (or about 5 mins at breakfast). I love the idea of low carb but it all involves so much cooking and I am rubbish and have no time to put together a veggie omelette each morning. Right now I have 2 crumpets with butter and marmite for breakfast, a sandwich or a ready made soup for lunch then I end up snacking on crap until dinner time when I have pesto pasta with veg or meat and pots with veg. No dessert as I hate anything sweet (inc fruit). I don't drink much now, maybe a vodka and coke a couple of nights a week. I try to exercise but am lazy and struggle to fit it in.

I am 4 stone overweight and really want to lose it. Any ideas of something simple?

I tried Atkins but too much cooking, calorie counting is not enough food without quite a lot of exercise, paul mckenna is ok but not enough time to listen to the CD. I know I am sounding like I am makign excuses but I am confused with what to eat (the low carb thing always makes me wonder if I can lose without cutting them out). I wish someone would just tell me exactly what to eat each day that would lose me 2lbs a week.

Things I do not eat:-
Cereal/porridge (hate milk)
Salad - I have tried but unless it is covered in mayo I can't bear it!
Sweet food
Nuts and seeds

Can anyone help a very fussy lady? Grin

My first bit of advise would be to ditch the diet word, diets generally only work for a short time, make you feel like you are giving up stuff and tend to be nutritionally inadequate which leaves you feeling like crap.

A healthy eating / lifestyle plan is more likely to work...

Boiled eggs with wholemeal toast is a good breakfast as it has your carbs and protein. Or have you tried cereal with soya or rice milk? They might be good alternatives?

Avoid high GI foods, white bread, white pasta, white rice or mash potatoes. Go for the more nutritious wholemeal versions instead.. Google low GI foods for good examples.

Soups and stews are easy healthy meals you can have for both dinner and lunch. Try chopping up carrots, sweet potatoes, tomatoes and onion add in stock a low salt and when it's nearly done throw in fresh coriander and blend it. Google soups and stews to find ones with ingredients you like but most are easy to make. Try to have protein with each meal so look for stews with beans and lentils in them (use the tinned version to save time).

Hummus dip is great with carrot sticks for a snack.

Drink water before every meal or snack it'll help your digestion and thirst is often mistaken for hunger so stay hydrated.

They are just some little tips if you really want to loose weight you need to make the time to do some exercise. Start with a 10 - 15 minute walk a day. You can loose 2lbs a week but there are no quick or easy fixes, if you want the weight to stay off you need to change your lifestyle and exercise must be a part of it.
