Wedding meal query

We're getting married next year and have decided to do a traditional summer fork buffet - we have some very unadventurous eaters so we can't have anything we'd usually think about eating.
Anyway!

We're having canapés to start (meat/fish/veg) and then;
Roast beef
Roast gammon
Poached salmon
Salads
Breads

And then dessert - either Eton mess, choc brownie or another yet to be decided (thinking maybe lemon tart?).

My questions are;
Do you think we should add roast turkey to the meats (or chicken)?

What salads should we go for?
They have quoted for a green salad and new potatoes as requested, but for the rest of it they seem to be serving veg you would expect with Xmas dinner!

I was thinking of asking for a simple green salad, a tomato salad and two others, but I can't think what - maybe we could go a little more adventurous here, but still recognisable to the plain eaters.

Also, what are your views on desserts?
And should we serve a cheeseboard?

Should add, its a very intimate wedding for 20-30 people so cost isn't an issue.

Will the meat be warm or cold?

When you sat fork buffet will they be eating standing or seated?

Surely it's pretty standard to serve those with seasonal veg?

Are there any vegetarians or vegans, as that sounds a meaty menu? A warm butternut squash and feta or halloumi salad is a favourite of mine. Roasted vegetables could also be good.

My view on desserts is that they are the highlight of any meal. Would you be offering a choice? If so I’d go for one fruit pudding, one chocolate, and something caramel based.

Cheeseboards I can generally leave at events like that. I love cheese, but not cheese birds at weddings.

That's a lot of choice for only 20 or so people. I would probably have only chosen two meats and two puddings. Salad would be green, coleslaw, potato and maybe couscous with roast veg.

What an odd question. I am sure the OP knows her guests and whether this is required or not, which based on her options I am guessing is not.

That’s not a fork buffet OP. You’ll need knives too. So assume it’s a sitdown new and people just get up to choose/collect their food?

I’d replace the gammon with roast chicken. Salads could include a green salad with grilled asparagus and Parmesan shavings and I agree with a PP that a couscous salad would be good, or a lentil salad with halloumi. New potatoes and some mangetout and green beans, maybe honey roasted carrots for the less adventurous eaters and younger guests. A cheese board is nice but it may stand a bit long at a Summer wedding and get a bit sweaty - I’d suggest you stick with 2 sweet desserts.

I think you need some carbs to fill people up, so maybe potato salad and a pasta salad? Also i would add some bread and butter.

I love your meats but chicken is always most popular and you definitely have too wide a choice for so few guests so swap gammon for chicken?

cheese board a bit OTT. /not needed

desserts sound fab - and yes, 3rd one s/be fruity so lemon tart would be perfect

re salads - agree with green one, and a tomato/onion and perhaps also a Greek salad (interesting but not too adventurous for the plain eaters) and maybe a pasta or rice based salad for variety?

Haha I saw that Gooseberry! I'm just curious to know if the veggies are expected to just feast on the salad & bread, it honestly wouldn't surprise me given some of the catering I've seen in the past for vegetarians and vegans.
