To summarise... Sunflowers is quite a ‘simple’ scent - it’s pretty without being sugary sweet and doesn’t knock your socks off. You might want to avoid any of the Mugler perfumes!!
The Guerlain ‘Aqua Allegoria’ range. Single notes (lemon, rose, herb, grapefruit, bergamot etc) but with some welly, additional scents, behind them. More complex than Jo Malone (which have limited silage / staying power and do you really want to smell like someone’s candle on your wedding day?!)
Can you get to a Penhaligons? They will really work with you to find ‘your’ scent. One on one service to everyone. They do a lot of ‘if you like this, you might like this’ till you reach a conclusion.
Debenhams also have great perfume departments. Lots of more niche perfumes (less chance of someone saying ‘Oh, you smell like me only Wedding day!). Ditto Liberty if you can get there. Again, very knowledgable and helpful staff.
For my money, try Eau D’Givenchy. Re-released after many years. A beautiful, feminine ‘day’ scent that has a strong Jasmin and grown up undertone. A new, old classic.
If you really want to push the boat out, then try one of the Chanel single notes (Selfridges, Harrods, Kings Cross Station, Harvey Nic’s). Les Baige is amazing and Gardinia will be my wedding scent.
