BLW - non-bread quick lunch ideas, please!

My DS is coming up to 8 months old and has been BLW for about 2 months now and is doing fabulously. However he still hasn't developed his pincer grip so still needs quite chunky stuff. My problem is that I'm at a bit of a loss what to give him for lunch that can be prepared very quickly (he's not very tolerant of sitting and watching me make food, so I can't take forever to cook something), other than sandwiches. He loves sandwiches, but I'm worried about the salt content and therefore would ideally like not to give him bread every day. Any ideas?

Batch cook and freeze.

I made falafel and meatballs to keep in the freezer for DD - still do in fact as they proved quite popular! Then just defrost in the microwave, v quick and easy.

Just watch which falafel mix you buy as some can be a bit high in salt.

Meatballs were brilliant - I made them into kofta type shapes so they were easy to grip. I also included veg in the meatballs - chopped up really small, or bunged in the food processor e.g.

  • chicken meatballs had courgette and red pepper mixed into the mince, flavoured with a little garam masala and cumin
  • pork meatballs with mushroom and spinach, with italian herbs for seasoning
  • beef meatballs with onion and mushroom
  • lamb meatballs with tomato and cumin

Also homemade fishfingers (coley/salmon) would be freezable. Ditto chicken goujons. And homemade potato wedges with hummus or something to dip?

For veg - I kept a bag of frozen organic mixed broccoli and cauliflower, and green beans, as she seemed able to manage those, and can be prepared v quick.

spanish omelette cut into wedges.
Ditto quiche.

At that age my DD enjoyed stuffed fresh pasta dressed with some olive oil, garlic and herbs.

forgot - spanish omelette and quiche can be made the night before and serve cold.
