what can i cook with peppers, tomato, and a bit more...

im stuck and need some ideas for meals for my 6 1/2 month dd. ideally to freeze.
i usually give potato with different veg, stew, beef and chicken , i have given fish but she doesnt like it.ill keep trying.
i would like to cook something with peppers, tomato mushrooms as my husband wont eat these foods and i dont want dd to end up fussy. im not blw.
what else should i give at this stage. im finding it so hard to give her variety.....
please tell me what you guys cook.

I'd cook roast pepper soup and have grilled mushrooms on the top.

If you grill the peppers sliced in half so the skin goes black and then put them in a plastic bag for 5 mins, you can get the skin off. Fry and onion and garlic, add tomatoes, chicken stock and peppers. Cook and then blitz with blender. To spice it up a little, add smoked paprika. Grill sliced mushrooms. Add a blob of natural yogurt in the soup when you serve it and the grilled mushrooms on the top.

I made a big batch of pepper soup and have just finished it off - delish!

ds is now 10mo and likes both - we don't add anywhere near as much chilli for his portion as ours.
he also liked spag bol pureed when he was smaller. with the baby pasta stars in it. we're trying spaghetti in it tonight.

Make rattatouille - courgettes, mushrooms, onions, celery, peppers, garlic, all fried up together in butter with pepper and some vegetable stock cube or bouillon (you can get baby/reduced salt ones) Add tinned tomatoes, and simmer for a while. You can blend or mash this up on its own or with buttered mashed potato, which gives it a nice texture. (We have it topped with mash and baked so the mash goes crispy)

mrsflux.....when you add your pasta sauce to spag ball do you use packets,jars or do you make your owm??? i'm worried about making things and the salt content of packet sauces or jars. when i make spag ball or lasagna im afraid i use jars of pasta sauce and white sauce. i can make white sauce myself but not the red pasta sauce. i also use packet chilli mix!!!! im useless i know.

Tomato sauce is easy, honest!
Start by finely chopping an onion, carrot, stick of celery and some garlic. (You can add other vegetables eg courgette, peppers at this point, or just have onion and garlic- whatever you've got in).
Cook them in some olive oil over a low heat for about 10-15 minutes, until soft but not browned.
Add a tin of chopped tomatoes, oregano and maybe a squeeze of tomato puree if you have some.
Simmer gently for about 30 mins (more or less won't matter, just let it bubble away until you're ready to eat).
I like to mouli mine for the best texture, but you can eat as it is, or blend it.
It's worth making a lot of this in one go and then freezing portions of it.

I'm afraid I have no advice on making mushrooms palatable, though, except maybe throwing them away .

Spag bol- onion garlic and carrot softened in olive oil. I add some bacon- half a rasher per adult portion. Then add mince. Once browner add some balsamic vinegar prob a table spoon and sone Worcestershire sauce and Italian herbs like oregano. Add tomatos from tin and simmer till you get the desired consistency 20 mins on lowish heat.
Chilli is similar but swap carrot for red pepper. No balsamic or Worcestershire sauce but obv add chilli to taste.

I know bacon and Worcestershire sauce are salty but my recipes make 4+ adult portions so I think the amount of salt fir ds is low enough. He isn't extra thirsty afterwards.

Pepper pasta sauce recipe

1 onion
2 red peppers
tin tomatoes
single cream

Chop onion finely, and sweat in a little olive oil until soft. Dice peppers, add to pan and add a glass of water. Cook til water has gone and peppers are soft. Add tomatoes and stir (you can add something like chilli or paprika at this stage too, but you may want to keep it gentle to start off with). Cook for about half an hour, stir in single cream, heat through gently and serve with penne.

My ds loves tomatoes, garlic, onions, peppers, mushrooms and cod/haddock, cooked together like a fish casserole, served with rice. He's always eaten fish this way!
