Structural integrity of roasted sweet potato compromised

VeryHungryKatypillar · 07/12/2008 20:41

Roasted sweet potato is always too mushy for DD to pick up/keep in hand for more than one bite. Am I making it wrong? Should I keep the skin on?

Any tips gratefully received!

That's what makes them so tasty

cmotdibbler · 07/12/2008 20:48

Ours always has enough of a crust to keep it together - you do need to make the wedges quite big in comparison to other veggies though.

The skin is horrid ime

Maria2007 · 08/12/2008 19:29

eerrrm, I'm sorry but sweet potato IS meant to be mushy, that's its natural form, that's why it's so delicious.

VeryHungryKatypillar · 09/12/2008 15:15

Well then its a rubbish finger food!

Thanks for responses all. I'll try to cultivate some sort of crusty edge to keep it together.

Could try sweet potato crisps - slice thin and spray with oil, then put in oven til crispy.

no help i am afraid, just wanted to nominate you for the best thread title ever! it is simply marvellous! are you an engineer or an economist by any chance ?

VeryHungryKatypillar · 09/12/2008 20:53

Why thank you. No, I am a lawyer, but perhaps I need a career change?

You should have added "Cap'n" on the end. Of the title, not the sweet potato. Let dd squish it in to her mouth, and through her fingers. She'll love it. You'll hate the cleaning, but will bask in the warm glow of parental self-sacrifice. So I'm told...

tassisssss · 09/12/2008 20:57

finger food's over-rated IMHO

sweet potato for babies is best mushed and given on a spoon

VeryHungryKatypillar · 09/12/2008 21:09

At the moment, DD is not letting me get anywhere near with a spoon, so that is sadly irrelevant from my pov.

You'll thank her as you get to eat all your own meals hot, and don't have to worry if you forget to bring any food with you - a spoon-refuser is the lazy parent's joy.

beforesunrise · 09/12/2008 21:41

ah no lawyer, that figures!

DontEatYellowSnowItsWeebump · 13/12/2008 22:13

Love the title of this thread. Is there a collection of good titles on the board? This should be amongst them.

EffiePerine · 13/12/2008 22:21

are you roasting at a high enough temp and in big enough slices?
