Vegetarian lunch ideas for 2 year old?

My ds is nearly 2. Used to eat everything. Now getting a little fussy with lunch as he won't eat anything relatively bland.

Any ideas??

At the moment he's stuck on 3 options - spaghetti and waffles, veggie sausage or eggie bread. At nursery he'll eat whatever they give him. Dinner isn't too much of a problem cos he'll eat mostly what we eat - usually curry with chapatti or rice.

He used to love pasta or cauliflower cheese - seems to hve gone off it all now. I would like him to have more variety in his diet..

home made tomato and lentil soup gets eaten by my 2 year old - you can make a batch, eat some yourself, freeze some - make it quite thick so he can eat it himself

forgot to say, if he goes for it vary it now and then with butter beans

also home made baked beans

Soup and bread is a good option.

How about sandwitches/cheese on toast/toasties?

Pizza? You could make the base and then get him to help add toppings, children are often more willing to eat something if they've helped prepare it.

Pitta brerad with a variety of dips also good.

Wraps? My DS has always loved these and will add anything to a wrap and eat it, grated cheese, salad stuff, pulses, olives, tuna, hard boiled egg, the possibilities are endless...

Houmous is a big fave in our house - in sandwiches or on toast, or to dip with falafel and celery. Eggs in lots of ways - omelette (with peas and soya beans cooked into it), scrambled on toast etc. Soup great too, and we usually go for lentil/beany ones for the protein.

Also have jacket potatoes with beans and cheese, or homemade chilli, cheese on toast, sandwiches...

Thank you for the ideas. SOme of them I have tried, but a while ago. Maybe I could try them again.
