Can I use Shaoxing rice wine (Chinese cooking wine)?

My baby is 9 months and has long since moved on from purees and finger foods. He's been eating what we're cooking for ourselves, and we've been careful not to add any salt and sugar.

We're planning on cooking a Chinese dish which requires Chinese rice wine (it really makes a difference). It's only a tablespoon for the whole dish, but it's still alcohol of course.

I read that if you cook a dish for hours, the alcohol is cooked off, but this dish only requires cooking for about 20 minutes.

What are your thoughts? Skip the wine, reduce the amount further or leave the recipe as it is?

It can have an alcohol % of 14-20%.
If you are making an effort to not include sugar and salt, it seems crazy to include wine. Although I’m sure it’s likely fine, it’s not something I’d add to a meal a baby was eating.

DF was a baby in an age where a nip of whiskey was added to baby milk to help them sleep. I’m sure it’s no coincidence that he and a couple of siblings have been alcoholics for decades!

If the alcohol is cooked off there's no problem using it in food that baby will eat.
