Lunch ideas - microwave and toaster only!

I'm having the kitchen refit and I had hoped to load the freezer with puff pinwheels and savoury muffins to grab, defrost and toss at my 8m old during the works. But....refit suddenly moved forward so I am totally unprepared. Dinners are fine - (slow cooker) but breakfast and lunches are very samey.

What can I give that is easy and quick?

At the moment it's
Breakfast - Shreddies/greek yog & fruit

Lunch - cheese sarnies, avo and toast fingers, banana on toast, peanut butter oatcakes with apple/banana, breadsticks with cream cheese....

Any other ideas?

I have 1 pinwheel left in the freezer and 4 weeks left with only a slow cooker, microwave and a toaster...

Jacket potato and beans.
Get some toaster pockets and make cheese toasties.
Microwave omelette maker
Scrambled egg on toast

You can do scrambled eggs in the microwave.

You can also make potato waffles in the microwave apparently, so baked beans come into play on those or toast

They'll brown better than in the microwave. I've only ever done them in the toaster (student diet moving on to general domestic slattern) . Potato cakes also work, and crumpets for all your carb based needs.

The mccain frozen jacket potatos have a nicer skin when done in the microwave than general spuds, if more expensive. They are quite quick though, it depends on your finances, time, and fussiness.

I don’t think weaning babies care much about that 😉
But I agree they are nicer. I take them to work.

Think I'll just stick to regular potatoes cooked in the microwave and scoop the flesh out for my weaning baby. I can live without crispy skin spuds for a few weeks! No space in the freezer either!

I trialled cooking fresh pasta in the microwave yesterday evening, that went well so pasta is back on the menu too.

I feel like this is my kind of challenge now I'm in the right headspace 😂

DD liked tinned fish at that age (check for bones). There was a BLW recipe that I recall was tinned salmon and yoghurt (and lemon juice?) that you mixed up to make a dip. She stuffed that down.
Plus tuna.

Assuming you eat fish obviously!

Salmon fillets can also be microwaved successfully.

You can cook rice well in microwave, even cakes. Salmon is also nice microwaved. Can buy easy bags of veg to microwave, small portions. Boil in bag fish and sauce good.

Wraps
Hummous and pitta
Tuna mayo with breadsticks to dip in it, my kids loved this
we never really had hot lunches when they were weaning.

And if all else fails grab some pouches, it's only for four weeks,

Never knew you could cook salmon in the microwave! Absolutely makes sense though!

Breadsticks dipped in tuna mayo is a fab idea, as is hummus.

Sardines or mackerel on toast

Both are rich in iron and omega 3, I used to give them to my daughter a lot for lunch when she was allergic to eggs and dairy

is the mivrowave a combi thingy?
in that case you can use it as oven.

we chop up any leftovers and mix with an egg (or two) and bake in muffin cases for a quick lunch item.

Baking egg cups is no problem with an oven facility and it was easy freezable grabbable things like this I was planning on loading the freezer with.

I have a basic microwave and a toaster, no oven.

The merchant microwave packets are pretty good and would easily do you plus a baby - I used them a bit when we moved in and discovered the oven didn’t work.
