help - butternut squash advice needed quick!

I hate cutting up and peeling the blighters but wanna use for me and the baby to try tonight (for which read in about an hour...!)

Can I just wash it, roast it whole with skin on and chop after or will that not work/take forever/be a disaster?

Or is there an easy peeling/chopping solution that does not involve lots of swearing and a trip to A&E?

No, roast it with the skin on then scrape the inside out. Oh, and have a nice cup of tea in the time you've saved

you can do it in the microwave too, although doesnt taste quite so nice. make sure you prick it all over though and put it in a dish.

It's easy to peel it with a good veg peeler rather than a knife.

dd doesn't like it, but it's easy enought to pull off when you serve it up. try it and see. might be q bit chewy for the very young but they'll just avoid it in that case.

Oh how I love butternut squash, I'm the only one in my house that will eat it though.
I shall force the next baby to like it just so I have a point buying it

I often cut it in half, scoop out seeds, pour over a little olive oil, sprinkle with mixed herbs and bake for about 45minutes or so. Peels away easily from the skin.

baby wouldn't touch the stuff (was more interested in mummy milk and calpol TBH not sure teething best time to be BLW) but I ate about half a whole one. His were big chips and a bit stringy actually so not sure it's best place to start (banana went down better!) but mine, slathered in olive oil, salt and a teeny bit of balsamic vinegar to dip were farking fantastic. And now I feel a teeny bit sick...

My local gastropub (god when WAS the last time I went there?) serves it roasted with honey and mint and the mint/sweetness combo is genius. I have been known to slaver in mint sauce that has been in the fridge far too long. Not for the kids obv.
