***BLW*** Aitch, or anyone else who has made the potato cakes on her blog, do you freeze the dough, or the cooked potato cakes???

Made too much mixture so want to freeze some of the potato cake dough, but no idea whether to freeze it as a dough or fry them off and freeze them ready made?

Need an answer asap before the dough dries out!

i've not done it, but you could do either i presume. i'd maybe shape them first as dough, then fry them at the time. you could keep them separate with greaseproof paper. or do half and half so you'll have the definitive answer next time?

Thanks, first batch went a bit awry (not enough flour, and a bit too much cheese) still tasty but a bit squidgy for lo as he's just starting out with blw. Next lot much better, he scoffed them!

tried this tonight, with not great results, probably over-mashed (potato was smooth, oops). As a result cakes stayed soggy rather than firm enough to turn over.

didn't matter, ds just pasted them all over his tray and didn't eat any anyway

Despite being a simple idea they are a bit tricky - I've been eating them perfectly made all my life, but took several goes (and phonecalls to my mum) to get them right. Don't add much liquid to the potatoes - just the slightest splash of milk, and the dough should not feel sticky at all. I would stick at them - they're fab with bacon (and a bit of butter melting on top if you're feckless about your arteries).
