what is it in jars of baby food that gives a shelf life of 2 years ?

as ive looked at a jar of boots organic turkey and vegtables,doesnt seem to contin any nastys other than sunflower oil

is it something to do with the way they are packed?

or am i missing something?

I would presume that it's a combination of being cooked at very high temperatures and packed in a sterile environment and then sealed.

They're vaccum sealed in a sterile container.

They are generally sealed in the jars and then pasteurised, which can lead to a loss of flavour and generally yukkiness, but also a long life.

I am bemused as to why they taste to bland yet yucky at the same time. Disgusting things.

don't think it is contents related. It is the sealing process that keeps it airtight for 2 years.

Same as if you bottle your own fruit. You cook it to kill bacteria and then seal in an airtight sterile jar. The sterility and lack of air and bacteria preserves it, but also reduces the vitamin and mineral content.

Combination of being cooked, then filled and sealed in a jar, then the whole jar contents and all are sterilised at such a high temperature and pressure it kills everything even bacterial spores that can survive temperatures of 120degrees.

Ones that are not sterilised to high temperatures are usually controlled by low pHs.
