Inspiration lacking - help me with meals for toddler?!

Since DD2 was born 2 weeks ago, and for the few weeks before as well we have been existing on the same easy meals over and over for us and DD1 who is 20 months.
Please tell me what you feed your toddlers and give me some new ideas!!!!

I have only just spotted the problem today TBH as I served up eggy noodles that she hasn't had in a few weeks and DD just refused to eat it. I don't have time or energy to continuously fight over food with her!

Normally for lunch we have
omelette, random sandwiches, cheese toasties, raisin pancakes, (home made!) sausage rolls

tea is pasta with pesto and peas, pasta with home made bolognese, fishfingers and beans, beans on toast, sausage and potato wedges.

and thats where im stuck now!

My 20 month old dd eats:

risotto (either butternut squash, pea and parmesan, mushroom and blue cheese, or scallop and prawn)
gnocchi (with grated cheese)
wholewheat fusilli with veggie/tomato sauce
meatballs
baked potatoes
fish pie
stuffing and veggies when we have a roast (she's not v interested in most meat)
sausages
omelette
mild chilli + rice
macaroni cheese (with broccoli/cauli)
Egg fried rice (home made - is a really good easy meal)

Really she just gets whatever we're having.

Bolognese sause with pasta twirls ( make huge pan of sauce and freeze into individual pots for when I am tired then just boil some pasta.

Beef Casserole done with leeks, carrots, mushrooms swede and any other veggies. Again I make a huge pot & freeze. I serve this with Mashed potatoes which I also have frozen

Fish pies made then frozen into freezer/ovenproof dishes sprinkled with cheese and warmed in the oven.

Corned beef hash frozen in pots then served with fresh bread.

Chicken Korma frozen then served with rice.

Homemade soup suprise suprise from the freezer.

I find my life easier if when I cook for me and DH I always intentionally make too much and then have at least one or two portions for freezing.

My DH works away and I work three days so on my work days I eat later than DD so she has something from freezer and then whatever I make later I freeze her portion for another day.

This makes me sound organised but the £ 10 I spent on loads of tupperware pots have been a lifesaver. The homemade soup is brilliant as i just put whatever I have in the pot and it's a great way of giving her loads of veg.

I also give her quick meals like Pizza & salad, beans on toast with cheese on top, pasta & sauce, sandwiches then bananas & custard for afters.

She does eat what we eat normally but DH and I are existing on cook from freezer meals as I don't have time to cook full meals for us.

PLus I have decided we need new meals for us all!

Little finger sandwiches made with cheese and ham and peeled and chopped tomato or tuna and grated cucumber or finely sliced avocado.
Cheesy scrambled eggs and toast fingers
Jacket potatoes with cheese and brocolli
Tuna pasta bake
White fish poached in milk with mash and veg
Salmon, pasta and vegetable bake
Thin chicken fingers with home made bread crumbs.

I picked up a copy of Annabelle Karmel's toddler recipe book - quite an old one in a charity shop and it is absolutely brilliant. Was very scared of weaning DS because of choking etc and as a result stuck to fairly "safe" foods as a result he is now an incredibly fussy eater. DD eats absolutely everything but I have been a lot more adventurous with her.
