As you have realised, you're best off giving your baby things that are as unprocessed as possible - fresh fruit, vegetables, ordinary cheese, meat and fish if you eat them, eggs, beans, bread, rice, pasta, etc. Ready made stuff you get from the supermarket tends to be jammed full of salt and lots of additives - not so good for small people at all.
I agree with your comment about exercising control while you can, and it can perhaps help to shape their tastebuds towards more healthy food?
I didn't give marmite when I realised how salty it was. There's plenty of other foods that a baby can have to get the same nutrients from IMO.
