We've finally got a working kitchen, after 3 months without. After months of sandwich and salads I need some inspiration, please!

1 month old DD mostly ats what we eat, but I'm in need of ideas for snacky things for when we get home from nursery late and there isn't time to cook - things I can batch cook and have in the freezer on standby.

Please share your best ideas/recipes with me!

Savoury muffins are good, easy to cook and freeze well.
DS likes carrot, courgette and cheese ones.

I am a nanny to a 1 year old

My simple quick fire teas [getting in the door and needing to feed the toddler in the next 5/10 minutes] are - beans/egg/cheese on toast, ratatouille [cooked from frozen] and cous cous, jacket potato in the microwave plus fillings, baby pasta [cook for 5 minute, steam spinach on top and then swirl pasta and spinach in Philadelphia, omelette,

Of the top of my head In the freezer I have

food that I can microwave from frozen

  • ratatouille [coked veg in tomato and stock] that I use as a tomato based sauce that I add to other things - but also works as a ratatouille with cous cous
  • mince and vegetables
  • mousakka
  • vegetable daal
  • soup - mushroom/vegetable

food that I defrost first thing in the morning which I will later reheat

  • chicken/beef casserole and mash potato
  • lasagna
  • vegetable fritters
  • vegetable muffins
  • curry
  • vegetable risoles
