Chicken and Veg stock - can I use cubes?

Can I use stock cubes to make up chicken recipes for DS? Are there any available which are low in salt etc? Also, what's the best way to cook chicken (DS is 28 weeks). Should I just boil it in stock or can i cook it in olive oil?

If he's only 28 weeks then personally I wouldn't use commercial stock at all - it has too much salt in it. Kallo (I think) make a low salt version but even then it still contains quite a bit of salt so might be better off left for a few months yet.

You can make your own veg stock quite easily but for now I'd just use water.

Sadly not. Cubes contain loads of salt, although there may be low salt ones that I'm not aware of.

At the risk of saying something you don't want to hear ... have you considered making stock ? It really isn't difficult. If you've had roast chicken, just put the carcass in a large pan, add an onion and a bay leaf, fill it with water and simmer for 4 hrs. You can also add a carrot or leek or celery stick but you don't need to. Don't take any notice of Anabel Karmel's recipe for real stock. I don't ask my butcher to order veal knuckles!

When its done it pour it into ice cube bags and freeze it.

Another good one is to keep the water you boil your veg in.
I never used stock, only water or the boiled veg water. That way your keeping alot of the goodness too.

Yes - you can fit more in your freezer, but trays would work the same

I've used the Kallo low-salt ones - contain hardly any salt at all. My local health food shop sells them.
