I have decided to stop raising my 1yo DS as vegetarian. Desperately need recipe ideas please!!

My DH is vegetarian from birth, and I have been vegetarian since getting married. I will occasionally have non vegetarian food though so by far not a strict vegetarian. We have been bringing DS up as veg but I am finding it increasingly difficult to get him to eat egg / tofu, and I worry about his main source of protein being lentils. He is also dairy intolerant. Hence the decision to start introducing fish and white meat. He isn't a big boy and has been growing along the 9th centile, and while I appreciate this is probably normal, I would like to see him put on a little more weight! I tend to batch cook and freeze his meals anyway but really need some ideas for fish / chicken meals that freeze well as its unlikely either me or DH will be eating the same food! Please help!! I have no idea where to start!

My DH is brought up vegetarian and our compromise have been to only eat fish and chicken at home. Depending on the meat use, some red meat recipes can be adapted easily to white meat only. For example, I use turkey mince in any mince based recipes. So that opens up lasange, spag bol, cottage pies, meat balls. (If your DH can be persuaded to eat meat, then stick with turkey breast mince as my DH find turkey thigh mince smells too strongly of meat for him). Anything with pork, especially ribs can be done on chicken wings and drumsticks. They are cheaper 'off' cuts in supermarkets. And great eating with your fingers.

If you do sub, then most cookbooks can be used. I'm not sure if you cooked meat before your turned vegetarian. If you need some inspiration, have a look at my daddy cooks. It's filled with quite easy recipes.

Oh and most things do freeze well. Have a look at the freezer section in the supermarket! Anything with a lot of sauce is great (curries, chillis). Even if it's pasta, you can freeze the sauce. For example, I freeze pesto and tomato pasta sauces in mini muffin trays.

Just to add that I think the only thing that doesn't freeze well is fresh veg!
