Can I freeze roasted veg for fingerfood?

I'm trying to do a variety of fingerfood for ds (8 mo). Mostly he chews and then spits it out - I think its a technique problem rather than him not liking the food though. Very keen to shove as much in as possible. A lot of it gets crushed in his fist though.
Anyway, I have an aubergine here... I thought I'd cut a load of veg in strips and roast them. Will they freeze and microwave? He only needs 3 or 4 bits per meal.

How to Freeze Aubergine
Slice the aubergines first. Then lightly sprinkle salt over the slices, cover them and allow them to stand for 30 minutes. Drain off any excess liquid and dry them using absorbent kitchen paper.

Heat some olive oil in a pan and fry the sliced aubergines on a low heat until tender (about 5 minutes). Place the aubergines on a tray and allow them to cool. Pack them in a freezer bag separating usable portions with cling film. Place the labelled and dated bag in the freezer. They will keep for 3 months in a standard freezer.

Darn it. Best not salt them for ds. He'll have to have 'em steamed. Or dh and dd will have to have lots of roasted veg.

I did it in little strips for ds and it did indeed turn out soggy. However I have successfully frozen adult portions of roasted veggies (eg whole or half potatoes, parsnips and carrots). The texture is not the same but is quite alright (maybe reheating them in the oven for quite a while to dry them out helpes?)

Well, I agree about the aubergine. A vegetable that was designed to be hidden in moussaka (or a lamb & couscous casserole in this case). But ds likes spinach and lentils and all sorts of things I don't so he may well like aubergine. And I have half an aubergine to do something with.
