BLW and roasted veg

I'm trying BLW with my DD and so far she has had tastes of various things and seems to be loving it. I was planning on trying her with some roasted veggies e.g. sticks of sweet potato and wondered, as she will only have a go on one or two pieces at a time, if I can put the rest in the fridge and give her it again another day.

If so - how long will it keep and should I warm it up again or just give her it cold?

with blw the key is to give her what you eat and that you should eat together. So if you want her to try roasted veg make enough for both of you

I would just do a selection of roasted veg (we like it with cous cous in this house) and have some yourself and let DD have a go too. It will keep in the fridge for a couple of days. Can be eaten hot or cold so I wouldn't worry about heating it up again.

Handy for sandwiches too, goes nicely with a bit of goats cheese.

I keep leftovers in the fridge for up to 48 hours, reheat to piping hot in the microwave and allow it to cool a bit before I serve it up. But I'm probably a bit over-cautious.

If you're going to serve it straight from the fridge then it's important to cool it quickly and get it straight in there so the bacteria don't have a chance to multiply.

I usually do roasted veg the same way as Rhinestone Cowgirl and have some myself with couscous. With BLW you don't need to make separate meals for you and DD - whatever one is eating, the other one can eat too.

If I do heat roasted veg then I microwave it to 70C (have a thermometer for this, but I use it for work!) and then let it cool again to an edible temp. It's probably freezable in chunk form too. The last lot I made I pureed down and froze in pots, then used it as a topper on ricecakes for both of us.

DD loves roasted veg, carrot, parsnip and potato are favourites.

Do you think the oil is a problem? We use olive oil and I do try to get rid of most of it with kitchen towel.
