Is it safe to freeze risotto?!

I tend to make my 10 month old's food myself and freeze in batches. He likes risotto but am a bit nervous about rice - I heard that it can be a breeding ground for salmonella amongst other things and I just wondered if anyone knew if it's ok to freeze risotto in batches?

Well you can buy frozen rice at the shops so I'd say it's safe - I've never ever heard of problems with rice. Fast freeze it :)

Yes, as long as it's completely cooled down beforehand, as quickly as possible - spread it out on a tray or something.

It's not quite what you want as it doesn't mention freezing, but bacteria can't multiply at freezer temperatures, so I think the advice would be to cool it within an hour and then freeze immediately, then when you defrost it, eat it straight away.

Risotto is fine to freeze, but do it quickly after it cools and nuke it properly in the microwave once it's defrosted (obviously then let it cool before feeding to child!)

Personally I wouldn't for a baby. The freezing is fine, but re-heating rice can cause problems as the bacteria won't be killed when you heat it again.

I did what Babybouncer said with rissotto for my DS when he was weaning.
