just boil it up, then drain and mash/puree

ds and dd used to eat it on its own but its nice with carrot and coriander (the spice not the herb).

katymac · 18/09/2005 21:47

DH & DD(7) love it roasted - but maybe not a good idea for a baby

Boil and mash with potatoe/carrot/sweet potato

Be prepared to be seriously shocked at how much you have to cut away and chuck out.

Err, cut into chunks and roast with a bit of butter - such a long time since I bought one, can't remember any more.

i just used to peel it, deseed it, cut it into chunks, steam it and then puree it! not very exciting but ds2 used to love it. would then mix with other veg, usually just a handful of which ever puree cubes came out of the freezer first! and sometimes chicken puree too.

It is from same family as courgette. Peel and steam or think Annabel Karmel suggests squash and pear together.

Mum2girls · 18/09/2005 21:49

cut it into chunks and roast like roast spuds - lovely - kids like it too.

Butternut is really popular in South Africa. I'm lucky that it comes already cut up into chunks in a microwaveable bag. I just pop it into the microwave for 10 minutes and then mash it. DD loves it. Also great roasted. Make sure it's really well cooked as it then caramelises a bit and is lovely and sweet.

I used to do it for dd with lentils when she was 5 - 6 months old (but that was when the advice was weaning at 4 months).

Peel and chop 4 oz butternut squash and put into a saucepan with 1oz red lentils and 1/4 pint of water. Cover and simmer for 30 minutes until the lentils are very soft then puree in a blender with a little more water. If the texture is still too lumpy, push through a sieve. Makes about 5 portions.

How old is Dd3? I have a lovely butternut squash and chicken risotto for babies that can chew!

jambot · 25/09/2005 09:26

That risotto recipe sounds nice. Would love to have it Jules.

You can cut them in half, scoop out the seeds and then roast in foil, with the skin still on, with a little butter / oil if you like. Then when tender you just scoop the flesh out and can mash with a fork, or puree with a younger baby. This avoids the need to peel it, which to me is the fiddliest bit! Possibly conserves more nutrients by roasting in the skin, too. They can also be steamed. Yummy...

halve lenghtwise, take out seeds, cut into long slices (no need to peel), put in baking tray with olive oil, a bit of chili, salt and pepper, roast for 40 mins then break up and use as a layer in a lasagne.

Jamie does this and it is soooooo delicious

Enid · 25/09/2005 09:31

sorry just seen its for a baby

frannyf · 25/09/2005 09:36

I think I meant "puree FOR a younger baby", not WITH. I did not mean to suggest you put your child in the Magimix.
