Does anyone know why some of the puree I'm freezing goes rubbery?

DD2 is 7 MO and I puree her food and freeze it in pots and ice cube trays.

When I've taken out two of her foods they've been really rubbery and don't mash up to a normal consistency.

The first was salmon, potato and cauliflower, which I then put a bit of stock made from Heinz baby stock cubes on. I'm presumed it was because of the stock, as the food on its own should freeze fine.

That's OK, I wont use that if it doesn't freeze well, although it doesn't say anything on the packet about it not freezing.

The other food was a cauliflower cheese I made with Heinz baby cheese sauce (my cheese sauce was too rich for her when I made it this weekend and she threw it back at me up)

The thing I can't work out about the cauliflower cheese is that the ones I froze in ice cube trays were fine, but the one I froze in a little pot went all rubbery

Can anyone shed any light on this for me please?

High starch foods like potato and cheese dontl freeze well and go gloopy. If you mash the potato or leave it chunky and do so when you heat it up rather than puree and freeze it may come out better.

the cubes vs pot will be to do with freezing speed (large vs small vols) ande ice crystal formation

cheese isn't a high starch food , but even my cheese sauce us a bit different when thawed

tbh if she eats it anyway why worry?

(I am way too lazy to make purees, let alone freeze them - ds just has the salmon / potato cauli etc off our plates)
