Console/Game recommendations for one-armed left-hander

Hello, this is a very specific question, so I don't know if anyone will be able to help but here we go...

My 5yo daughter has lost function in her right arm due to a brain tumour. She has always been left-handed, but could make do in most things because she could use her right hand, it just wasn't her preferred one. Now that she's lost it as an option, I am having trouble finding family games she can join in with. She used to enjoy playing Mario kart as a family, for example, but she can no longer do this as the start/stop buttons are on the right. I can't see any options in settings etc to allow for one handed, or even left handed playing.

So my question is, does anyone know of any family-friendly games/consoles that will be accessible to my left hand only daughter?

Auto accelerate is an option for mario kart. Change it in when you choose your settings, would that help? Can she use the joy con to steer as it’s motion control?

I didn't know auto-accelerate was an option. We will try that out. Will it also sort out braking issues? She can use a joy con but only one-handed (so cant press buttons, especially as her hands are small anyway). The issue with her right arm is that it has a very significant tremor so she has no real motor control - can't even use it to steady something she's working with. Effectively she has as much use of it as if it wasn't there at all. Not sure if that explanation helps!

I don't know if this will be much help but if you have an Xbox you can buy adaptive controls to help. My son has a form of muscular dystrophy so we bought it along with this set of switches.

Thank you for these suggestions! We currently the old Wii plugged in as she can play Wii sports, but nothing else. We do also have a switch, but are not averse to selling/exchanging it for a different console if it'll mean she can be better included in family gaming. Got thinking about it over Christmas as we have previously bought a new game over Xmas to play together, but didn't this year because it wouldn't have been fair to.
