Watchdogs 1 and 2, the storylines involve computer hacking the environment as part of the main mission and the side jobs. It's amusing listening in on NPCs phone conversations/texts, stealing money, messing with traffic lights, gas mains, bollards, vehicles, viewing webcams and CCTV, etc, etc. There are plenty of hacks that involve solving puzzles to gain access into a buildings/companies network. The second game is more 'fun' than the first, you get a drone and a 'jumper' (remote control wheeled vehicle) to access hard/out of reach areas.
Far cry games, loved Far Cry 5, great storyline involving a doomsday cult, led by charismatic nutjob Father Joseph Seed, along with his family, very different and interesting. Gorgeous Montana scenery, loads of collectibles, side quests, interesting characters, (especially the Seed family) wild animals, and a brilliant soundtrack. You also get Boomer the dog to help out if you want!
Far Cry New Dawn, follow on to FC5.

Death Stranding's very strange, and using a baby (BB in the game) as a 'tool' is weird yet fascinating. (I've not played it but DD has and I sometimes watched, she loves Norman Reedus so I think this was the main motivation for buying the game)
Days Gone, (Biker fights massive Zombie hordes). Watched DD play this, I'd panic too much 
RDR 1 and 2, Arthur Morgans witticisms to his camp mates, storyline, horses and scenery, say no more!
All are open world with main mission and loads of side quests, so loads of hours to spend....
Personally I prefer more realistic games than fantasy, but sometimes you do stumble across something you wouldn't have otherwise tried. I use Youtube to check out the titles to see if it's my thing before buying.
