Favourite whole food plant based recipes that actually taste nice

Please may you give me your favourite whole food recipes (plant based as posting on vegan board please)? I will ask google too obviously, but would love to know what actually tastes nice!

I guess it depends what you like as tasting nice is quite subjective. There are millions of things you can make with whole good plant based ingredients but our staples tend to be veg based bolognese- typically use the food processor to make chestnut mushrooms into a mince texture- and Mexican style bean chilli (again with mushroom mince). Canned beans and pulses and plenty of mushrooms I think are key to filling and satisfying plant based meals that are quick and easy. Quick stir fries with whatever veg you like can be made a lot more filling with tofu - I've recently been enjoying the smoked tofoo and it's so simple to make it tasty by grating it and frying it in the wok with oil and salt and pepper.

I think people can think whole food plant based food doesn't taste good because they forget that you can still bring indulgence to your plate with plenty of good quality olive oil, salt and pepper, spices and herbs etc. I've been veggie most of my life and vegan for around 9 years and I love my food so very invested in making tasty meals (that my omnivore son will eat too!)

If you have the spare cash, I would also recommend planthood meal boxes as they are healthy, whole food based and generally really tasty. We get them every couple of weeks to take pressure off cooking and give us new things to try.

Could mash up some avocado instead of sour cream too. Might be healthier than vegan cream

If anyone else is interested I think m&s ready made gazpacho is whole food friendly. It is definitely vegan friendly. Just had some for lunch and it was very nice

We get a meal kit from Grubby. It’s been life changing. So many amazing recipes - we usually count at least 10 plant points per meal. They use lots of herbs, spices, condiments which are already measured. It’s extensive and don’t think we have had many repeat meals. We often don’t even bother choosing ourselves because the options are so good. They do great sauces with cashew nuts and nutritional yeast etc. We order the 2 person kit but stretch it out for our family of 5 with extra beans, lentils, tofu etc.

In this recipe it’s served with pitta breads but we have served with just about every grain and it goes well.

Almost all of her vegan recipes are delicious. I'd advise @SistarSystem to find a food blogger who appears to like the same sorts of food you like and then try some of their recipes to add to your repertoire. The Vegan Society also have recipes for people just beginning to dip their toe into plant-based meals. Also you can ask AI to suggest how you can make some of your current favourite dishes vegan and/or more healthy.

Similarly with a mention, Green Chef, who I have never bought from but who publish all their recipes online. They are fab for something a bit elevated and usually lots of whole foods.

Roasted red pepper stuffed with couscous, cherry tomatoes, spring onions, fresh mint, fresh parsley, squeeze of lemon, garlic and spices (pinch of this and that, usually black pepper, cumin, paprika, cinnamon).

You want plenty of tomato and the peppers to be really soft and slightly charred

Homemade pesto (can use vegan cheese) and homemade houmous made with chickpeas, tahini, garlic, lemon juice, olive oil, maybe red pepper.

The Spicery (mail order spice kits) is good, we make the Mexican chili weekly and just use beans not mince.
