Where do I start?

I've been reading in the news today about halal meat, how it's often not labelled as such, and the most terrible suffering of animals in slaughterhouses: I couldn't bear to read the details.
This has finally made me want to turn to plant based eating, after considering it for some time.
I like to have around 100g of protein a day, and feel healthier for it: can I meet this on a vegetarian/ vegan diet?
I'd be glad of any advice on just where to start, too: would it work to make gradual changes?

The vegan society have some good and balanced resources on how to get started, with the summary being to start slow and make incremental changes. If in doubt, speak to a doctor too.

Can you instead (at least for a while) buy higher welfare meat less frequently? Do you eat fish? Would you eat eggs as a vegetarian? Do you eat vegan alternatives already, or will you be having whole foods vs UPF?

I do achieve 90-100g protein per day but that includes protein powder and a protein snack daily.
I stick to 1900-2000 calories. This is a typical day
breakfast - toast made with homemade high protein sourdough (I love toast, but there are better higher protein breakfast options, chia porridge is really good, I just love toast)
lunch - salad with air fried tofu/edamame, or leftovers of dinner, vegan sausages in a roll, air fried tofu sandwich (banh mi style), soup with lentils/beans/tempeh etc
dinner - curry, stir fry, pasta with sauce and added protein etc - I always have tofu, seitan or tempeh with dinner. I grate tempeh and fry it in olive oil and then add nutritional yeast which is delicious added to pasta or stirred into rice.
I add 30g of Myprotein clear vegan powder per day (they have a bunch of different flavours) and I like Jade and joy bars or bounce balls that I buy in bulk. Alpro also do a very nice high protein yoghurt. I have one of those (bar or yoghurt) as a snack daily and all of that adds up to 90-100g protein.

I also went vegan because I couldn’t bare to hear what happened to animals in the farming industry. I figured I’d I couldn’t listen/read about it, I couldn’t justify consuming it. I then got into the environmental arguments and it really is a very easy win to even switch to a few plant based meals each week for the environment.

The vegan society is a great resource. The veganuary website is also up all year round. A couple of really easy protein kicks that I have had to adopt while breastfeeding:

Blending silken tofu into soups and sauces
Add mashed lentils into mashed root veg
Adding chia and flax to breakfasts and salads

I know some people also use protein powders in porridges and smoothies, but it’s worth researching yourself whether that will support your protein needs. For me, a lot of that protein from powder would be inaccessible.

I take a multivitamin that contains B12, D and iodine. I also take DHA and EPA supplement (made from algae)

I am going vegan or plant based for the same reasons as you OP, but I am doing it gradually. I have never been a big meat eater. I started reducing the meat I ate to meat once a week, then none at all. I then got educated about the dairy industry, and reduced my dairy intake too. I am still eating a bit of cheese and have milk in my coffee. I would love a good vegan cheese. Does it exist?
I don’t know if I will ever be completely vegan like some of my friends, but I can see the day I won’t eat butter, cheese and milk which are dairy products I still consume a little of.

The replies on here have been really helpful, as they’ve made me realise that it doesn’t have to be a sweeping all or nothing approach: I can make gradual changes, and that’s made it feel more manageable.
