DH wanted us to go vegan a while back. But never made any suggestions of what we should eat! I've basically got into the weekly routine of one lentil bolognese, once chickpea curry, one lentil curry, one bean curry, something with tofu. It's a bit monotonous and always a bit same-but-with-different-vegetables, the Dc will only eat Thai style curries, but not Indian style.

He's now decided he:
doesn't want to eat soaked beans (a colleague had bad food poisoning after soaking beans) and my DC don't really like the tinned ones as they're mushy.
Doesn't want to eat spicy food as it no longer agrees with him.

So, just as I think I've found things for us to eat, it changes.
Short term, I need to find something for us to eat this week.

Please help me with some ideas

  1. not spicy
  2. no mushrooms
  3. no nuts
  4. balanced protein
  5. lowish carb

He needs to do the meal planning while you sit there with sausage and mash

Im not convinced vegan is good for growing children in any case but I know others will disagree

You would try:
Quorn bolognese

home made carrot and coriander soup and crusty bread.

a chunky vegetable soup, after frying the basic veg and adding stock, split it into two saucepans and add in some soaked Bean Mix for the kids

sweet potato jackets with salad

Richmond sausages and mash

Everyone (assuming DC are old enough) come up with 5 meals that they would like. Vegan-ise if not already (easily done). Meal plan from there. Your husband definitely needs some proactive input here, rather than giving negative input.

Batch cook and freeze in portions too, so you can say cook rice for everyone, you and DC can have a Thai style curry and DH can have e.g. bolognese with his rice.

Are you against the idea of meat substitutes?

My meal plan for this week looks like...

Mon - tacos (made using plant based mince and an old el paso sachet. I did substitute 50% for finely chopped mushrooms but that's because I'm trying to reduce calories!)

Tues - lasagne, salad and garlic bread (lentil or vegan mince based bolognese out the freezer from previous batch cook, with a lazy sauce - sainsburys plant pioneers cheese sauce packet mix as I'm short on time this week, would normally make more of a vegan bechamel sauce)

Weds - sweet pot/chickpea/spinach curry with rice

Thurs - stir fry (I will probably use a meat sub here as husband isn't a fan of tofu) with noodles and spring rolls

Fri - jackfruit chilli nachos (jackfruit chili, a tomato and sweetcorn salsa, guacamole, vegan cheese)

Sat - sausage mash & beans

Sun - undecided as yet

Other regular features in our house for quick, easy meals -

jacket spud, filling of choice (usually something different for everyone!) and salad

Roasted veg, some sort of seasoning (usually along a parsley/paprika/garlic type route here, husband not a big fan of spice) with a protein (tofu, tempeh, sausages or something) served with either rice or wedges or whatever.

Edit: Any mention of cheese or whatever is obviously vegan subs!

My dd decided to go vegetarian aged 13 and doesn't like mushrooms or lentils. The one thing I regret is not telling her that she should cook for herself at least once a week.

Personally I wouldn't want to go vegan and I definitely wouldn't want to be having to rack my brains for recipes.

I don’t think you can be vegan with no nuts and no pulses. He needs to sort the pulse issue out.

The only suggestion I have is to try tempeh. It’s a bit nicer than tofu. But also, he needs to plan the meals doesn’t he?

Continue cooking as you are and let your husband research ideas. Start splitting the responsibility for cooking.

Have a look at Miguel Barclay’s Vegan One Pound Meals. I’m not a vegan but was pleasantly surprised by his recipe ideas.
