Easy protein for lunches

I would like to add a bit more protein to my lunches and looking for inspiration.

(For clarity , Im not fully vegan any more as I do eat eggs and I am gluten free as well as having a few allergies, main ones being edamame beans, oranges, and quorn amongst others)

I love soups and tend to have home made soup and oatcakes or a gf sandwich (tomatoes, cucumber, salad etc) or a salad with falafel, humous etc. I often think I could eat humous constantly as I love it but even the most avid fan can do with a change.

I do sometimes make other dips/spreads to put on oatcakes, I made a lovely black bean one a few weeks ago that lasted a few days in the fridge so more ideas like that might be useful.

I love tofu, lentils, beans and chickpeas and have them as a main meal quite a lot but these feel a little heavy on the cooking side for a quick lunch. I often have oats and nuts for breakfast but happy to have more. I have a fairly healthy diet but would like some easy/lazy ways to add a bit of protein at lunch time just to fill up a bit more.

Anyone have any go to ideas or inspiration? Open to most things as long as it doesn't trigger a reaction. Also happy to batch cook and have it easy to grab and cook from the freezer, thats what I do with my soups. I tend to be at home for lunch but also open to ideas for when I take a packed lunch places.

Maybe I can add something in to my soups? I do add engivita to brocolli soup which is nice. Or these packets of ready made lentils to add to my salads.

Have you tried blending a can of white beans like cannellini etc into your soups? Thickens it up nicely and adds some protein.

Try adding a handful of roast chickpeas as a topping to soup, or dip etc. Or some cubes of fried tofu coated in breadcrumbs or cornflour.

Great ideas, thanks both. Thinking about it I do add cannelini beans to one of my soups (pea and mint), it didn't cross my mind to add beans to other soups but its an easy add.
And I love roasted chickpeas and often have them as a snack. I can keep some back to add to salads and soups. Thanks again

I do
-sweet potato wrap with hummus and two falafel/chickpeas with mango chutney
-Salad of diced uncooked firm tofu with celery, grapes, lime juice and a teaspoon of sri lankan curry spice is really nice

  • grated carrot mixed with raisins and peanut butter is a good sandwich filling / topping
  • like you, not vegan, I have eggs in a big Spanish tortilla, sliced and eaten cold
  • Buddha bowl with quinoa, beans, chickpeas, hummus (hard boiled eggs), beetroot, salad, seeds, olive oil, lemon juice
  • I also make up pots with frozen fruit, soya yoghurt, two spoons of silken tofu, and a handful of pecans or flaxseeds as a good work snack

I often make chickpea salads with raw veg and a tahini dressing (ambitious kitchen on fb has some good ideas)

Dahl is easy to make a big pot of and freeze, I add extra veg.

Soups with beans (Tuscan bean soup is lovely)

I get the smoked and non smoked tofoo and slice up, air fryer and then put slices in sandwich or wrap with Avo and toms, lettuce and then crisp up sandwich in pan
