I was going to do it today but hang over and generally disorganised.

I have porridge planned for breakfast with a banana, home made lentil and veg soup for lunch and a mushroom and lentil bolognese for tea.

Fruit for snacks and plenty of water.

Doing it for all the reasons, animals, environment, health etc etc.

Anyone else doing it?

As for b12 - even the vegan society admits there's no natural vegan forms - yeast products do contain it eg marmite if you can stomach that otherwise their advise fortified products

@anothernamechangeagainsndagain a meaty diet doesn't naturally contain b12 either when you consider it's just an animal that's fed a b12 pill!

No. I really can't get on board with it. I'll happily do a dry January and happy to cut out all the sweets and goodies we get a bit too used to in December but not interested in a vegan diet. Good luck with yours!

I’ve made a warming vegan veg mash dish.

I chopped onions, garlic, a chilli, mushrooms and fried that up with olive oil. Threw in some herbs.
Boiled some carrots- about 6.
I then heated some Quorn mince, bit of water and half a cup of vegan red wine. If you don’t like Quorn you can use lentils.
Threw all of the above into one pan and made a vegan gravy, added some salt and pepper,
Boiled some potatoes, mashed with vegan butter and Alpro my cuppa milk and topped my veggies with that.
Served with fresh veggies.

I’m vegan, DH is meat eater but will eat vegan. We both thoroughly enjoyed it too!

@HermioneWeasley I went for a vit b12 jab thinking I was lacking in vits. It actually gave me an awful reaction and I had to wait for it to leave my body. Many vegan milks etc have added vitamins so you can overdose if you add stuff in. If you don’t eat well you will lack vitamins- same as if you eat meat, if you don’t eat ‘well’ you’ll potentially get sick.

We have enough for today too. It’s getting cold here so may do a stew for the weekend. 😊
We love Richmond sausages, they are a little too realistic and come with a ‘skin’. Delicious though.

For breakfast I have porridge with Alpro my cuppa (best for tea too imo).

Im trying to cram the veggies and salads in as much as I can.
Im not going to buy the desserts or chocolate, as I really want to lose some weight!

@bakewellbride no, but I’ll take a look thanks. Really want fresh stuff, more than the quorn etc as much as I love it! Want a kick start for January.

Eating out Saturday, so I’ll go for vegan chilli but with rice.

vita b12 is only found in animal products so needs to be supplemented.

Ultimately, everything comes from the soil or the air. In the case of B12, it's the soil. Plant sources are more difficult to absorb but it's possible & present.As a number of others mentioned, everyone is supported by various foods being fortified. Funnily enough meat and cow milk are two of them 🤔 My preference is nutritional yeast, it's fortified but that's no different to most people's source

I got myself tested for B12 last year, through work health check because I was curious. At that point, I was 4 years into vegan dirt. My B12 was way higher than needed.

Truthfully, many people have a crap diet and most of them are omnivores. Diet and fitness is an issue for everyone, hence the problem of people consuming too much sugar, and the growing obesity problem. Ironic perhaps is that the biggest issue is not eating enough vegetables 🤣

Just stumbled across this post whilst eating my lunch. It's veganuary every day for me, and this is a go to meal and has everything I need!

I take some multivitamins as I always have, and I'm definitely not lacking in anything.

How are you getting on OP?

I always have porridge for breakfast, made with oat milk, banana, 100% peanut butter and a dash of salt. It's delicious

@Missingmyusername I make a bit bowl of salad and use it throughout the week, it has whatever I can find at the store, usually:
Grated carrot
Sliced onions
Cucumber
Purple cabbage
Peppers
Radishes
Apple
And a pot of pre made store bought bean salad
I mix into the salad half a pot of vegan pesto mixed with water to thin it into a dressing. I use pumpkin and chilli pesto from Asda.

Today I had a helping of the salad above, helping of salad topper (pre bought, it's mixed nuts and seeds) half a micro bag of brown rice, and half a pack of vegan kebab bits.

In terms of portion size, I don't pay attention to portion size, I just always use the same pasta bowl to eat out of as I know that's a good size for me.

I am a seriously lazy cook, as I have to cook for 3 kids who eat different things.

Another go to for myself is mixed bake beans on brown sour dough marmite toast, topped with nutritional yeast.

I also like a pie with vegetables and gravy.

Bean chilli is an easy one, throw about three tins of different beans in a slow cooker, add onions (I use diced frozen), tinned tomatoes, smoked paprika, chilli, garlic. Some mixed herbs. Squeeze of tomato puree. Served with nutritional yeast on a sweet potato with hummus

@willsandnoodle delicious and healthy. I’ve taken a screenshot - thank you. Pumpkin and chilli pesto sounds lovely, I’ll have to try this. Bean chilli 😋one of my faves, I always forget sweet pots, I must get some. Nutritional yeast- not heard of that. I’ll have a look. Thanks again.

I eat loads. But it's usually healthy stuff so I don't worry or count calories.

Nutritional yeast is dried yeast flakes, they add a nutty, cheesy flavour and I use them in place of grated cheese. It's available at the supermarket usually in the vegan isle, or free from.

I love potatoes too that’s probably my problem 😳Ah yes, the cheese replacement! Can’t seem to find a nice cheese. I’ll look out for those flakes today - thanks!

DH used to watch lots of YouTube videos of the Edgy Veg who also does vegan recipes, I had a look and she’s still making content on YouTube and instagram.

sesame see oil and other flavoured oils can pimp up any meal.
peanuts chopped with tofu are ok as 'cheese' replacement on pasta.

Please just let us share our vegan recipes with each other without the negativity / misinformation. I never post my thoughts on the carnivore diet threads / similar.

That's not true. Farm animals in the UK are not given B12 supplements. The bacteria in their intestines make it. They get cobalt supplements as the bacteria need these molecules and lots of soil is deficient in this mineral in the way that soils need nitrates to grow plants. Lots of vegan foods are supplemented with B12, it doesn't occur naturally in plants.

There's a kind of parmesan cheese you can make with nuts chopped in blender, nutritional yeast and (I think) a 3rd ingredient. There's a shop bought version of that as well.

There's also a soft "cheese" made by blending cashew nuts (with something else, can't recall what exactly), to make in small amounts & put on salads.

Not the most precise with ingredients 🤣 but easily found with Google

Also various dips can be made with blending up different kinds of beans for salads and Buddah bowls.

Can make a kind of mash out of butter beans too, as a low carb option that's also rich in protein

Because you're eating more veg now, you'll more often end up with spare ingredients that might go off, so it's handy knowing how to avoid waste.

Fermentation is a good skill for that. Most veg is suitable. I've recently done this with a red cabbage that wasn't going to get used in time.

Spare Cauliflower can be blended up for a rice alternative, it you're using some but unlikely to use it quickly in the usual ways. It's a good excuse for using a lot in one meal to get rid of it. Fermentation is an option too
