I want to try....and a window of opportunity is upcoming

My DH is a diehard carnivore. It's weaved into every facet of his life.

I would love to try veganism, at least for a little bit if not longer. I can't do that with DH around. He's away soon with his work so I have an opportunity coming up to cook and eat without judgement!
I will have 2 whole weeks. Can you help me meal plan for those 14 days? Quick, easy and low prep the better! I have a slow cooker if it helps.

I have a fussy almost 3yo who I need to factor in as well, but they're happy with baked beans, waffles and plain pasta, and a baby that will be weaning then too.

To clarify, it's vegan diet/meals planning for 2 weeks I'm looking for. I'm not at the whole lifestyle stage yet.

Do you use Instagram? I follow an account called vegan explorer girl and her recipes are so good. I made her cauliflower (it's a pinned post) the other day and even my 1.5 year Old loved it. But honestly her reels make vegan food look so good!

I recommend Healthy Living James and Deliciously Ella as well on Insta for lots of good vegan recipes.

The simplest approach is to think about the kind of food you like then find vegan alternatives, whether it's casserole, curry, wraps, pizza, stir fry, burgers. Then experiment with new and different veg in salads, dips and roasted tray bakes.

Do you mean like meat substitute products? I'm not keen on meat substitutes, I've tried a couple before and the salt content was ridiculous!

Do you like Indian? Most of our vegan nights are Indian.

Mexican also good if you leave out the sour cream and cheese.

Thai / Chinese / Korean good too.

You don't need to use meat substitutes. But what kind of meals do you like?
I cook a lot of Asian food. Tofu is the main protein and a lot of veg. Pad Thai, green/red curry, stir fry, curry etc with rice or noodles is a staple meal. Buy some marinated tofu rather than the plain block if you want to be safe but you can also press and marinate tofu yourself and then use it in everything!
you can make pizza with dabs of Houmous instead of fake cheese.
lasagne with sauce made with vegan milk/butter and nutritional yeast for cheesy flavour and lentils for substance.
pasta is always easy.
baked potatoes with ratatouille
homemade veggie burgers if you want to avoid processed food, you can make them with beans and vegan egg alternatives for binding such as flax.
There are ways to veganise every type of meal (apart from meat and two veg I guess 😆) without using processed fake meat, it just depends what you like to eat.

Breakfast is easy -- oatmeal with berries and plant milk, soya yoghurt with berries or other fruit, scrambled tofu with toast.

Lunch, lentil soup is lovely, as is leek and potato.

Quinoa is complete protein, have instead of rice. Salad dressing lemon, olive oil, salt and pepper, optional herbs fresh or dried. Lentils are divine in pasta sauce. Violife makes a decent vegan parmesan.

Make a mushroom lentil loaf in advance as a quick backup if you get stumped (plus they're delicious!) Veganise Sarah Brown's famous mushroom lentil cashew loaf, or try this amazing: www.makingthymeforhealth.com/mushroom-lentil-loaf/

@VintedoreBay no I didn't mean meat substitutes. I meant think about the kind of meals you like and find vegan versions as I think that is better than changing your eating habits completely. Vegans eat the same stuff as everyone else just plant based.

Wraps - I use roast cauliflower or sautéed mushrooms instead of meat
Pasta - I make my own sauces eg pesto without cheese
Pizza - work out which veg and nuts you like
Stir fry - tofu plus your favourite veg
Curry - cauliflower / chickpea / spinach / sweet potato for example or lentil dahl
Burgers - so many fab recipes for plant based ones
Stew - eg mushroom bourgignon,

Some meat based substitutes are not bad at all but I prefer to have them only occasionally and at home I stick to veg and pulse based meals.

Forgot to add.... roast dinner!

I buy vegan Yorkshire's and then have stuffing balls, roast potatoes and as much veg as I can fit on my plate with lots of gravy. It's a real treat and no need to replace the meat!
