Vegan AND Gluten Free

Hi

am looking for some ideas to feed visitors, one of whom has coeliac disease.

They are staying with me for a few days so I’ll need to have a few recipes up my sleeve.

We eat curry a lot here but unsure if 11 year old DC from USA will ? I have lentil shepherds pie as a safe option. Maybe a chilli - beans/ tvp/sunflower mince? with rice.

Any ideas will be most welcome - thanks

V and GF here too. You sound like you have some good ideas already, and you can always google recipes if you need to... You can always cook a pasta dish and make the gf pasta separate, I often roast veggies to go with pasta and sauce (homemade although if you check they are out there); Risottos are good too. Are you vegan/veggie yourself?

They need to bring some of their own food. Gluten free veggie is hard work (I am). Gluten free vegan is a proper nightmare.

A mixed pepper risotto with kale is nice, marg instead of butter, vegan parmesan and gf veg bouillon. Not sure if white wine is vegan or not.

Me, DH and DS are vegan . They are not vegan but all eat GF.

i May compromise on the vegan aspect to keep it simple for them - as our veganism is a choice - the GF is medically necessary.

Dh is vegan and gf, some of our regular meals:

stir fried peppers and onions with fajita seasoning served with baked sweet potatoes, salsa and guacamole

jerk mushrooms with rice and peas

Stir fry vegetables, crispy tofu, rice or rice noodles and homemade satay sauce

This mushroom cottage pie (substituting the butter and milk for non dairy) www.bbcgoodfood.com/recipes/wild-mushroom-chestnut-cottage-pie

What do you usually eat? It shouldn’t be too hard to do gluten free alternatives.

@megletthesecond I've never found it a nightmare, myself; it's easier than ever to simply make substitutions, as you've stated. I have found I eat a wider variety of foods now than I ever have!

Wine - some of all types is vegan, more isn't - they use animal products in the process.

Vegan gf here. Check out Elas kitchen for some great recipes. BBC good food has a fab vegan chili that I add extras to like mushrooms, butternut squash. Serve with rice, guacamole, limes, vegan yoghurt & cheese. The gf breads ie linseed and buckwheat are good on there but a bit of a faff.

NuffSaidSam · 23/07/2023 19:35

I think if you're already vegan then just making gf options will be easy peasy.

It's the other way round that's hard.

Potatoes and rice are gf. Gf pasta is good. Gf bread is ok, but not amazing. So just do whatever protein you normally do and use either a naturally gf carb or buy a gf alternative.

Do you allow non-vegan stuff in the house? If so, I'd maybe get some eggs for breakfast etc and they can do their own so you don't need to cook/eat them.

nobodygoesdowninthejungle · 23/07/2023 20:26

BBC good food has a 5 bean chilli recipe which is delicious and both vegan and GF
Otherwise, could you do some simple meals with alternatives - eg jacket potato and a selection of toppings; soup with some GF rolls.
I'm not sure if I'm going overboard by doing this but, knowing that our kitchen is "mixed", when we have a cealiac friend staying, I always get a new thing of butter, jam & that sort of thing just for them to use so I know it is GF and then, when they have left, the rest of the family dig in and use them as usual. Same with things like GF biscuits & cake & things. You have one or the other, don't mix & match and potentially contaminate the GF goodies.

Thank you all for the suggestions. I think I’m just daunted as want to make everyone happy.

Watch out for 'may contain' wheat or the other gluten grains on food packets as that's too much risk of cross contamination for a coeliac. For instance I have found it on a packet of cornmeal. You might find a recipe or two here... https://glutenfreecuppatea.co.uk/category/recipes/dietary-requirements/vegan/
