Wondering what staples are in your cupboards and what your shopping lists look like

So i have been vegetarian since i was a teen, now mid30s and now i am shifting to plant based. I am hoping to find out what staples are in your cupboards or what your shopping lists look like, what types of snacks or quick & easy go-to meals can be recommended. I definitely couldnt eat the meat-free substitues as i really struggle to enjoy the taste of meat/fish so would find it completely unnecessary to buy anything like that. I am more thinking of plant based dishes and i am beyond a disaster in the kitchen obvisouly this will need to improve as well. Really looking forward to some tasty suggestions!

Pretty much everything in my larder comes either from Hodmedods, or via a weekly veg box. If I want a significant amount of wine, cheese or fish I order from a specialist supplier. Anything else is topped up from Ocado.

I’m obviously not vegan! Long term pescatarian. Never eat meat substitutes.

Vegetarian. Don't eat meat substitutes. Entirely Asian menu mostly. Most Asian food is naturally vegan without fake meat. So curries - even though there is actually no such thing as a curry- and stirfries.

Non-Asian veggie /vegan meals: wraps, pasta, enchiladas, risottos....

Tomato and red lentil soup is lovely. Quick and easy to do too. Also leek and potato soup.

Cheese and onion quiche is tasty with a fresh green salad.

Penne Arabatica is cheap and filling.

Quorn sausage casserole with chopped onion, a tin of plum tomatoes and a tin of haricot beans with a few new potatoes chopped in half with skin left on.

Mushroom omelette is quick.

Jacket potato with baked beans and cheese on top.

Rainbow Bolognese with a little bit of Quorn mince, two tins of tomatoes, squirt of garlic puree, basil, chopped peppers, one each of red, yellow and green ones. With spaghetti.

Tagiatelli in blue cheese sauce. Using a pot of creme fresh and a big blob of gorgamzola cheese poured over the tagiatelli.

Macaroni cheese.

My dh eats the above most weeks.

Not very healthy but:
My Dc like Flora Plant Butter as a sub for butter on toast
They also like La Boulangere Vegan croissants and Pain au chocolat warmed up in a mini oven for breakfast
They don't like very dark chocolate and after trying lots of vegan chocolate their faves are Montezuma No Udder and Hotel Chocolat's nutmilk
Toffoo Naked is their favourite tofu. they bake it in the oven dipped in soy and have with rice or noodles, edamame and green veg etc.
Richmond Frozen Vegan sausages

You are veggie already so you just need to sub in something different for the dairy/eggs/honey etc.
We don't like the fake vegan cheeses so we just add tinned white beans or toasted crushed nuts to things such as pasta to make them more complete (nutritionally) meals. We rate Belazu Vegan pesto if we aren't making our own.
Merchant Gourmet packs of ready cooked Quinoa and different grains ( or the supermarket own brand ones)are a great convenience to throw togther a Buddha bowl type meal with for example some shop bought falafels, grated carrot, some salad, olives and some harissa, tahini or vegan yoghurt on the side

We found you have to try a few different brands to find what you like. Some biscuits are "accidently vegan" e.g. Mini Jammie Dodgers, Nairn's choc chip oatcakes, some brands of bourbon biscuits ( check packet as some have whey in the "cream") and dark choc digestives. DC love Maryland Vegan choc chip cookies (Sainsbury's sell them)

Thanks! So much to try and even a few treats that happen to be naturally vegan too thats a brilliant surprise. I never enjoyed cooking before but since going vegan i have found i enjoy it much much more. DS(13) is not likely to go vegan any time soon, he eats chicken but isnt a fan of any other meat, he does like the meat substitutes though and he has been trying some of the new reciepes.
Having been a vegetarian for basically forever, i was lucky as a kid i hated meat, i havent found it too tough eradicating dairy and having just watched a few documentaries on the dairy industry im absolutely convinced i could now never touch anything to do with milk ever again...
