Making vegan cheese

Does anyone make their own VC? If so, do you need a fancy-shmanzy vitamix stylee blender?
I realise that you can buy nice v cheeses, but I am out in the sticks in rural Ireland (all my neighbours are livestock farmers), so it can be hard to source in these parts.

I have made mozzarella type which is ok when we do homemade pizzas, and ricotta style for topping Aubergine parmigiana etc. Tried a halloumi recipe tonight which looked promising in the fridge but went all weird when fried. Probably a rubbish recipe as I did follow it to the letter. All the ones mentioned have been cashew based. I used to use a stick blender but just bought a new big blender from Lakeland which was around £80 (got a 20% off too) as am not able to afford one of the proper Vitamix type ones. It's not bad 1200w I think but expect the expensive ones are better.

I'm still undecided as to whether it's worth making my own cheese especially when it is a bit disastrous. I was eyeing up the online cheese making course from Kinda Co but it's quite pricey and not sure at the moment.

Sorry for rambling but to summarise my new blender is ok but I imagine a top of the range one would be better (whether its £500 better is another question) 😁

I do occasionally having found ‘Artisan vegan cheese’ written by Miyoko Schinner in a charity shop. I went on to buy her other book ‘The Vegan Pantry’ - which I much prefer. The best (or rather the easiest) to make are soft, spreadable cheeses (soaked cashews are the main ingredient) - I do have a fancy blender - but I don’t think it makes too much difference - but I don’t like it too smooth!

I have made the fermented cheese from the Pantry book - it’s time consuming but also easy but I only use it for cheese sauce (and it is delicious) as I didn’t particularly like as a plain cheese - but I might need to try harder!

Yes I have, you just need a normal blender cashew nuts, agar agar, stock, vegan flakes (sorry forgot their actual name). If you want the recipe DM me & I'll send it to you

Hi, jumping on your thread to ask if anyone has made vegan cheese from a kit.
I'm thinking of trying the BOSH one but can't find any reviews.

Like connie I've made a nice one, spreadable though, you just soak some almonds in boiling water and leave o/n, take off the skins if you've bought the ones with skins on which are a lot cheaper. Remove from the water ( I put it in the compost bin or water my pots with it, mixed with more water of course.) I use a handheld blender, you do need plenty of flavouring, spring onions ,chives, garlic, salt, what you like of course etc. I then used lemon juice and olive oil . If its very wet leave in a muslin cloth over a large bowl to drain o\n. It's good kept in the freezer. I don't use cashews because they give us arthritis.

I regularly make a variety, mostly soft cheeses which don’t need things like agar agar. I make a rejuvelac tonic so it’s a proper ‘cheese’ and it takes a few days to culture this type ( think that’s the right word! ). It takes much better though and more like cheese than just a cooked coconut oil type thing.
