Tried and tested low carb(ish) vegan recipe ideas?

Hello, I have recently made the change to being vegan but feel like I am very limited in my repertoire of recipes for main meals. It doesn’t help that I live on my own and find because I cook in bulk I end up eating the same meal for days which I think makes me bored more quickly.

I have bulimia and find eating foods that are heavy on simple carbs (eg: pasta, bread, pastry) trigger my binge eating so I’m trying to replan my diet to avoid these foods which doesn’t help with having a varied diet! Potatoes and rice seem to be okay. I feel stuck in a rut now where most meals are either vegetable/ lentil curry with rice, veg chilli with rice or baked potato or some form of ratatouille type stew thing. I know there are other things out there but feel overwhelmed when I look for recipes online or open a cook book. I’m awaiting ADHD assessment and find too much choice a bit paralysing. I don’t massively enjoy cooking or shopping and find a lot of recipes either require a lot of preparation time/ processes or require lots of unusual ingredients I’d have to try and shop for. I also hate washing up with a passion and don't have a dishwasher so admit anything which requires lots of different equipment always puts me off a bit!

So I’m just wondering if anybody can share their tried and tested vegan recipes, ideally ones low on carbs and high in veg/ protein. I don’t like any fake vegan ‘cheese’ but otherwise eat most vegan things, don’t mind things like vegan sausages etc. If it’s something that’s relatively simple/ quick to make after a long day at work that’s even better! I know there must be lots of delicious recipes out there and that there must be more variety than just chilli, curry or ratatouille but just need some inspiration.

Have a look at the recipe book Plant You by Carleigh Bodrug. Tons of easy vegan recipes mostly wfpb although a couple are pasta based.

I don't think there is any fake cheese unless you make it yourself. Wfpb recipes may be more useful to look at as they don't rely on processed foods and tend to be more rounded as in not reliant on one particular carb /protein source.

I'd suggest a sausage and bean casserole (veggie sausages, onion, garlic, tomato, couple of tins of beans and carrots and celery if you like them) with green veg, maybe mash if you fancy it ?

I also made a lovely Mexican salad the other day of black beans, sweetcorn, red onion, tomato and lime juice and served it with guacamole and a few tortilla chips.

I also make a nice Thai peanut curry with sweet potato, red curry paste, peanut butter and coconut milk and spinach. Very filling so
Doesn't need rice.

Thank you. I hadn’t heard of wfpb (had to Google it to find out it means whole food, plant based) but definitely looks like that will be helpful in terms of googling recipes. I have ordered the recipe book as well so appreciate the recommendation.

Sausage and bean casserole is a great idea, that’s something I used to make all the time years ago before I was vegetarian so don’t know why I didn’t think of that! Thai peanut curry sounds great as well, I have been making loads of Indian type curries but for some reason hadn’t thought about making a Thai curry even though again this used to be in my repertoire years ago, I’ve never done it with peanut butter but that sounds delicious! I think my eating has just been so disordered over the last few years, I’ve been living on pasta and toast and oven food like garlic bread or potato waffles with quorn chicken kievs, and I feel like I’ve forgotten how to cook good, nutritious food even though once upon a time I used to cook all sorts. Going vegan is an attempt to try and get a better hold over my eating and to start cooking meals with proper veg from scratch again.

Chickpea burgers, bean burgers and butter burgers without the bread buns. All these recipes can be frozen and you can just defrost one or two as and when you need them. Serve with salad instead.
Falafel with salad and tzatziki or humous
Tuscan bean stew
Tofu and veg stir fry
Scrambled tofu and veg fried rice

Nush has been the best low carb cheese option I have found to date - I usually have it with celery sticks or stuffed into jalapenos which I then bake. There's a version with chives in too. It's a cream cheese rather than a "hard" cheese.

I eat a lot of smashed avocado with nutritional yeast, chilli, onion and lime juice all mixed together - either as a dip, as a side, or by itself.

Other ideas - walnut, mushroom and aubergine chilli, courgetti with toppings, Vegan Poke bowls without the rice, no carb noodles with toppings (I use the Barenaked noodles), stuffed peppers with various bits and pieces, and grilled mushrooms and aubergines with toppings (plus a little bit of any vegan blue cheese).

You could try 'appetite for reduction' recipe book, it's pretty old school but a vegan cookbook for weight loss. Lots of low carb / no carb meals.

Sorry to have described it as weight loss, I'm sure that's not what you're after, but I just mean to give some context to how the recipes work.
