Accidental vegetarian/vegan

I never particularly liked eating meat. However in the past I would eat what DH cooked, which usually included meat and he is a wonderful cook.

Over the last two years I have been very ill, including neurological and immune conditions for which I was put on an intense and ongoing steroid treatment. Also I have lost touch with my stomach, so I no longer feel hungry or know if I am full, which makes me fussier, as I have to really want to eat something or I would rather skip it.

Last time I had a bad stomach ache, I stopped eating for a week and it did not bother me at all!

Since then my repulsion from meat has grown and I am finding that I have been accidentally been following a vegetarian/vegan diet for years/many months. Not helped that I was already avoiding milk, gluten, onions and garlic (unless infused in oil) due to hospital dietician guidelines because of my bowel conditions.

So looking for ideas for lunches and main meals.

Low/absent in gluten
No weird fake meat, they are repulsive as real meat to me.
No milk/cream
No onions
No garlic (can use garlic infused oil)

Currently I eat, cooked by my husband

Twice a week : Stir fry vegetables, rice noodles, suitable sauce

Twice a week : Broccoli, cauliflower and carrot mild curry made with coconut milk with a side of rice

Twice a week :Jacket potato with mushrooms air fried with spray garlic oil and served with a spoonful of vegan sour cream

Once a week : EITHER vegetable curry starter from the local Indian with a couple of poppadums' OR vegetable satay with rice from the local Chinese

(I have am ill and have stomach pains following either treat, there will be onion and garlic in the base sauces for sure. Worse with the Indian. So looking to make this treat monthly rather than weekly)

I'd recommend looking up a blog/recipe site by a lady called Vegan Richa.

I use a lot of her recipes. I'm not really into fake meat and she tends not to use it. I recommend her specifically as her recipes are either gluten free or will have notes at the bottom how to sub to make gluten free.

She does use onion and garlic but these can be easily be left out.

Thank you for the suggestion. The first recipe I read of hers just happened to be garlic and onion free, how funny is that !

I fancy trying this dal recipe Well bother my DH into cooking it for me. I drop everything, so a bit rubbish in the kitchen with the glass hob!
