What is your family's favourite vegan or vegetarian meal?

I want to reduce our family's meat intake, so will try meat-free Mondays again. It's going to be hard for my son, because he's a carnivore, and to him, any meal without meat isn't right.

So can you please give me inspiration with a vegan or vegetarian recipe that all of your family really love? We don't eat dairy, but we can substitute with vegan cheese if it's a cheesy dish.

www.rivercottage.net/recipes/north-african-squash-and-chickpea-stew this is so good. With a flatbread or something it is a filling meal. A simple veg pasta bake is always popular too and quick and easy after a long day.

Some of our family favourites/regulars:

Chilli and rice - either made with a variety of beans, or mushrooms and beans, or sunflower mince

Mushroom stroganoff

Fajitas - either with mushrooms as the main ingredient, or a pack of frozen chargrilled veg, or a tin of ratatouille

Jamie Oliver brand spinach gnocchi

Richmond meat free sausages with mash and onion gravy

Richmond meat free sausage casserole

Mushroom risotto

Tofu katsu curry (you can even buy kits with the breadcrumbs included if you like)

Vegan burgers and homemade wedges (we like Morrisons The Best - Ultimate Meat Free, Beyond Burger, or Coop's own Gro burger with some salad/avocado etc toppings)

Clive's nut roast or pies (love the creamy mushroom one)

Chicago Town sticky bbq jackfruit stuffed crust pizza

Noodles with tofu (fried until crispy - I recommend the Tofoo company stuff) and black bean sauce/chow mein sauce, etc

Naked Without the Splash fish(less) goujons to replace a fish and chip night (or to have alongside chippy chips)

Easy lentil dhal (Deliciously Ella recipe)

Linda McCartney hoisin "duck" meal kit - add cucumber

Just Rol pastry to make homemade vegetable tart type things - everyone picks their own toppings

Lasagne - LovingItVegan have a good recipe, and this Tesco one is good realfood.tesco.com/recipes/vegan-aubergine-and-red-pepper-lasagne.html

Shepherd's pie made with green or puy lentils

Loads of roasted veg - sweet potato, cauliflower, etc can make a great one tray meal (add hummus or another dressing)
Also second the recommendation for the Green Roasting Tin for inspiration like that

My teens who are committed meat eaters to my veggie wannabee status will eat anything if it's in a wrap. Lots of veggie chillies in wraps go on in my house for them.

Basic tomato and veg sauce with pasta.

Chickpea curry

Dhal

Thats about it for meals they both like. One doesn't like veg, the other doesn't like fruit and only one eats melted cheese or any type of creamy sauce.
