Bosh spicy stuffed aubergine - What can I use instead of the soya mince!!

I’m a numpty. I thought I had some in the freezer.
What shall I use instead?

Or ditch the menu choice and make something else?

Lentils, or chop mushrooms finely and fry them to remove plenty of liquid before using like mince

I substitue grated carrot for soya mince in my chillis.

I’d use those. Drain and rinse them and maybe give them a quick blast in the microwave. I wouldn’t fry them. I’d do the rest of the stuffing and just stir them through at the end.

I don't suppose you have any of the dried/de-hydrated mince?
Otherwise, maybe crumbled up tofu or tempeh (lightly fried), crumbled up veggie sausage/burger/bacon slices/kebab/'chickn' strips? Obviously depends on whether you have any of these things in the house!

I used grated carrot and the tin of lentils (drained). The mixture is quite dry and powdery. What shall I do/add?
