So I have decided to do this and support a colleague in work with an engagement initiative

I like to cook meat free quite a bit but want to explore more recipients and options without making this too difficult

Healthy and low calorie options are top of my list and I'm thinking of planning a few days at a time

Anyone else want to share recipes and motivate through January....?

I recommend these two all the time:
Bbc good food burnt aubergine chilli. Do a double/triple batch and freeze in portion sizes. It take a long time to cook but it’s very easy and keeps really well.

Super quick. Super easy. Freezes well and you can add all sorts to change it up. I like it with roasted butternut squash/sweet potato on top, or a some cashews or chunks of crispy tofu.

Meera Sodha's column in the Guardian is awesome. I don't think there is a duff recipe. You won't even notice it doesn't have meat or dairy.

The book "the green roasting tin" has lots of brilliant options for low cal whole food vegan mains. You can mix and match the veg as well so easy to adjust recipes depending on what you already have. Besides that my go to quick meal is daal or stir fry with tofu. I would give vegan cheese a swerve during the early days. Once you've gone some time since having dairy cheese then it's actually pretty good, but having them side by side will not give you a good opinion of them. Richmond, quorn, and the meatless farm all do really nice vegan sausages, and the squeaky bean brand is the best for faux meat sandwich filings (especially their pastrami slices). I personally eat a lot of soup for lunches or hummus on toast.

Don't forget to be proactive about supplements. It's easy to get enough calcium as a vegan but you have to be intentional about choosing fortified plant milks, calcium set tofu, dark green veg, tahini/sesame seeds, almonds etc. Most bread in the UK is made from calcium fortified flour. You must make sure you get B12 one way or another (if you eat a lot of marmite toast and plant milk then you're probably fine, if not you need a supplement). Boots do a good vegan A-Z vitamin which contains B12, calcium, iodine, iron etc as well as lots of other things. Good luck.

I make a vegetable curry by cooking vegetables (whatever is in the fridge) and adding curry powder, salt and coconut milk.

Easy chilli - passata, tins of whatever beans you like ( I use kidney beans, black beans and butter beans), chopped peppers and spinach. Add cumin, curry powder, paprika, chilli powder and salt and pepper. Cooks quite quick on the hob and tastes lovely with brown rice or on top of jacket potatoes or potato wedges. Also nice with a dollop of mashed avocado mixed with lime juice.

I love the plant based protein milk in porridge so that will be my go to breakfast I think

I think substituting milk in my morning coffee will be hard!

I’ve never found any milk I like in tea or coffee. I ends up just drinking it black instead.

I really like vegan richa’s website. Not particularly quick and easy but really great curries and most are suitable for batch cooking and freezing (which I’m slightly obsessed with!).

This is one of my favourite healthy lunches…

I have unsweetened soy in tea, tastes no different and oat milk in coffee, I tried an almond latte today in costa and it was nice

Oooh I had vegan wrap with roast veg, humus and chilli oil

Also had vegan pizza and salad which was lovely!

I haven't had tea or coffee and my head is pounding! But I also tested positive so could be covid!

Lots of fruit and veg though.

How has today gone @bjjgirl ?

I've made leek and potato soup which was lovely! The Richmond MF sausages, spicy tomato's, mushroom and spinach

Had a snack of multigrain ryvita (vegan ones) with humus and roast red pepper on

To be ho eat the amount I have stopped myself from grazing on picking at is unreal!

So today I had a huel shake for breakfast with an Oat millk latte, curry for lunch and dinner then
7 corn cakes with garlic cream cheese (that was about to go out of date) in the fridge, so I slipped but I really felt incurably hungry!

I was at the gym for 2 hours this morning, and I have been starving since. I've had all my calories so can't wait at any more/

I am going to try again tomorrow and I am not buying any animal products at all in jan

I train usually 2/3 hours a day (Brazilian juijitsu and gym) so I need a lot of protein, struggling to get it

I'm hungry today but that's hormonal and I've trained this morning (no where near as much as you do! Wow you are hardcore!!)

I've had veg soup and Marmite crackers, then just made a vegan pukka pie - LOVE THAT and would recommend!!!

I have had sourdough bread with avocado for breakfast, huel Mexican rice for lunch and then 2 greggs sausage rolls (vegan thou) I finally feel full- I did loose 1 kg yesterday thou

Can I join in? I did Veganuary last year and decided to do it again this year and try to improve my health a bit. Mainly veggie this week because it's DS's birthday and I always make him a cake so I'm not missing out on that! Definitely no meat tho even though I wanted KFC yesterday.

I found coconut milk in coffee was the best, sainsburys do an own brand sweetened one which is lovely. I've stuck to using that all year, only drink coffee with cows milk when there's no other alternative now.

I have been hungry all day today but it's the time of the month so I would normally binge chocolates!

Made a foolish revelation today! Not all vegan food have a vegan stamp on haha so I actually have so much more food available to eat!

I've lost my taste completely with covid today so I think Ill just eat veg tomorrow :)

@bjjgirl I would imagine eating little and often and plenty of protein....

I tracked yesterday and although in calories I am eating so many carbs! Just trained so going to have a protein shake which I normally don't like but I think it will help
