Roast dinners - non-meat main dish

We almost always have a roast on a Sunday. I have a friend who is vegan, her DH isn't. He only has a roast dinner if they eat out on a Sunday (remember those days?!)
She is very happy for others to eat meat around her. So was thinking of having them over for a roast dinner eaten outside.
What are your favourite vegan Sunday roast 'centrepieces'? And what should I definitely avoid - eg if you never want to see another nut roast in your life please say so!!!
Also are plant based milks ok for making white sauces? Or are some better than others? I often make a cauliflower cheese as a side dish when entertaining, can use vegan marg and cheese, just wasn't sure about the best milk.

I love a nut roast!

I’m not much into vegan substitutes for milk and cheese. So what about an Ottolenghi style roast cauliflower, perhaps with tahini and lemon?
Or indian style gobi?
Either should go well with a traditional roast.

I love a cauliflower feese!
I make the sauce with marge, flour, unsweetened soya or almond milk (basics UHT), seasoning and a dollop of mustard.
The violife extra mature cheddar style from Tesco is good, as is the vegan applewood smoked.

I like a homemade nut roast and usually use a packet stuffing mix as the base, layered with roughly chopped mixed nuts, fried mushrooms and onions plus ‘bits and bobs’ like dried apricots or cooked lentils. Bake in a greased tin.

Most pre made pastry is vegan so a country vegetable or veggie mince and onion pie would go down very nicely.

Toad in the hole done with vegan sausages.

Red bisto is vegan!

I can’t believe your friends never eat roasts! I am vegan and DH not and we have them twice a week, it’s the meal we can always agree on!

The haggis recommendation from pp sounds amazing, I will investigate

Thank you all, lots to choose from there! We are also trying to cut down on meat so will use some for family meals during the week.

@BeastOfBODMAS I am amazed how many people I know who never have roasts, even where the whole family eats meat. I think they think it is difficult, but it's all about timing and far less of a faff than some other meals.

I think chestnuts are the perfect pairing with a roast, they have the right amount of richness, and they are "traditional" too. Vegan toad in the hole and vegan Wellington are other roast alternatives that go down well. This mushroom and sweet potato one is nice:

@RockingMyFiftiesNot I agree it’s loads less faff than something you need to stand and supervise.
Mind you I’ve honed the art of cutting spuds carrots and parsnips to certain sizes so they all cook at the same rate in one pan. Same with green veg.

I love vegan Wellington. I just used chopped nuts and whatever veg I have kicking around in the bottom of my fridge or freezer, usually butternut squash or sweet potato, and a ready rolled pastry so it's not difficult or time consuming

I like nut roast, the Asda plant based chicken roast (Tesco one is foul, avoid) or the Asda vegan Wellington. Failing that, some Richmond meat free sausages.

For nut roast I use the Jack monroe recipe or cheat with an artisan grains mix - the cranberry one is my fave.

For a cheese sauce, I make a standard béchamel but use vitalite and my usual oat/hemp milk. Any plant milk will work as long as it's unsweetened. Then I add some vegan Parmesan (strong flavour so less needed as vegan cheese is mainly oil) and some nutritional yeast.
