Lazy, not too processed, vegan meal ideas?

Does anyone have any suggestions for lazy vegan meals / meals that someone who can't cook can achieve, but not involving too many mega processed foods please?

As you can tell, I'm not a good cook! I can do basic things though, but best to assume you are talking to a total idiot novice here Grin

My quick easy favourite are:

Jacket potatoes with beans or chilli

Vegetable & butter bean curry with rice

Vegetable & lentil stew with dumplings

Sausage, chips/mash & peas

Chilli with rice

Cashew nut stir fry with whole wheat noodles

Pasta with mushrooms, peppers & tomato sauce

For speed & ease you could use instant mash, curry sauce, pre-packaged stir fry veg, packet (dry mix) dumplings etc.

Gyoza, noodles, miso paste for broth, and whatever veggies you have in the fridge! My favourite lazy but still healthy meal!

Have you thought about a slow cooker? A lot of meals don’t require much actual cooking, just prepping to the specifications and shoving in the slow cooker.

We have a slow cooker! The only things I regularly make in it though, seem to need a bit of cooking beforehand. For example, we make a (delicious) tofu thing in there with spicy peanut sauce, but I still need to press and fry off the tofu. Also, the time it takes is sort of annoying as it is 4 hrs, rather than a whole day where I could leave it there from morning till dinner time. Not a big deal, but it doesn't feel like the simplest process - not hard, just not super convenient iyswim?

I did warn you, I am crap in the kitchen and an extremely lazy cook GrinBlush

There are some great easy recipes on the bbc good food site. The veggie jambalaya is a favourite here.
