Quick and easy vegan meals

Inspired by a thread on chat, what are your quick and easy throw together vegan meals?

I live with meat eaters (dh is lactose intolerant) and I think a lot of meat/dairy dishes can be quick to do. Quiches, omelettes, as well as meat dishes. And since I am working more and my dh is cooking more I am ending up eating more meat alternatives. Which I don't mind to a certain extent. He's also happy to cook vegan and everyone is happy to eat it.

I love cooking healthy vegan food from scratch using lentils and veg and nuts and suchlike but it tends to be more time consuming. I often batch cook and freeze these things too.

But sometimes lately I would like quick and easy put together meals that don't involve too much forward thinking and aren't just a meat alternative.

So what are your go to quick and easy meals? Especially warming ones now we are coming into the coder weather. Any ideas welcome, even vegan alternatives. From beans on toast to fancier things.

I am GF just to add to the mix.

I'll start....

'Cheesy pasta' pasta cooked and drained. Back on low heat and add plant milk, grated violife cheese and plenty Engivita and a handful of spinach.

Pasta and vegan pesto.

Any others?

Vegan Lasagne Soup. It's amazing, easy and so tasty. I often make the soup part in advance and the just pop the pasta sheets and spinach in before serving. You can always serve it with vegan garlic bread to to really bulk it up but I don't feel the need as it's very hearty.

1 Tbsp olive oil
1 onion diced
3 crushed garlic cloves
2 Tbps Tom purée
1 Tbsp dried basil or use fresh
1 Tbsp dried oregano or use fresh
1 400g tin chopped Toms
6 cups veg stock
1/3 cup red lentils
90z lasagne sheets
3 cups spinach
Garnish with fresh basil

	In a large pot, heat the olive oil over medium heat. Once the oil begins to shimmer, add the onion and cook for 3-4 minutes, until semi-translucent.
	Add the garlic, tomato paste, basil, and oregano, and cook for 2-3 more minutes, or until the onions are translucent and herbs are fragrant.
	Add the tomatoes, stock and lentils, and bring to a boil. Increase heat to medium-high and cook for 10 minutes or until lentils are halfway tender.
	
	Break apart the lasagna into about 2-inch-long (5-cm) pieces and add to the pot. Let the soup cook for another 10-15 minutes, or until the pasta is al dente and the lentils are tender.
	Stir in the spinach and let wilt, then serve immediately.

Oooh these chickpea burgers look amazing and less time consuming than you would think. Do they freeze well?

I also love tofu but i like to squeeze it, bake it then fry it so it's always something I have to plan ahead earlier in the day for.

With colder weather coming in an instapot is your friend as is Vegan Richa’s blog - every recipe she does in the instapot is a hit here (I skip the pre-frying bits and just chuck everything in)

I am impressed at all your ideas of quick and easy.

I second vegan richa’s site. I haven’t got an instant pot so they take me a while to make but they’re delicious.
I batch cook a lot. At least once a week I’ll do a double portion of something like chilli/curry/daal etc anc freeze half so all I have to do later is cook fresh rice or a potato to go with it. After a few weeks you build up a nice supply of different meal options.
