Vegan with GD

Hi all. I’ve just been diagnosed with gestational diabetes at 28 weeks, so for the next 3 months I have to avoid eating too many carbs, and have to eat little and often (3 small meals and 3 snacks per day).

A lot of the dietary advice I’ve read online is geared towards omnivores, so there is a lot of focus on eggs, meat and cheese.

Does anyone have any recommendations for vegan meals and snacks which are high in fibre and protein but low in carbohydrates?

My DP has GD and has never been to low carb. You might be confusing a low carb diet with a low GI diet, which is normally what’s advised for GD. He’s actually encouraged to eatstarchy foods that release sugar slowlysuch as wholewheat pasta, brown rice, granary bread, all-bran cereals, sweet potatoes, oats and pulses. What he has to avoid, however, is sugary foods like cakes, ice cream, biscuits, fruit juice, smoothies and white bread, white rice etc..
Nut butters, Quorn, quinoa and tofu are all OK as well.

Ah, that's going to be hard.

I can't comment on vegan, but I can tell you what I ate when I had GD with my 3rd.

Snacks:

  • peanut butter and apple slices
  • berries and yoghurt (presumably you could use plant based options here)
  • nuts
  • dark choc
  • some dark choc ice cream

Lunch:

  • I used to eat lots of oatcakes with avocado. Oats didn't seem to trigger any blood sugar rise.
  • hummus with veg sticks
  • soups and oatcakes

Breakfast:

  • yoghurt
  • porridge

That was it. Breakfast was v limited

I found food pairing would work. So some wholemeal bread toasted (apparently it's better toasted for blood sugar but don't quote me on that) with beans for dinner was good.

I couldn't eat any bread, eat much fruit, no white pasta or rice, no potatoes, no fruit juice.

I did eat lots of cheese and ham I'm afraid.

There must be some specialise vegan GD help somewhere online. Or could you flex to be vegetarian for the next few months? (Sorry if this is an offensive suggestion, I just thought it was worth asking as your diet will be rather limited)

On a positive note I left hospital lighter than before I got pregnant.

Presumably he has regular diabetes of the non pregnant kind?!
