Making vegan easy for parents & kids - Veganuary!

Hi everyone! :) Hope you're all having a great start to the new year.

How many of you are taking part in Veganuary and how are you finding it? What are your reasons for taking part and will you carry it on?

Im personally finding it quite easy at the moment! We do love the smell of a bacon sandwich and miss Cadbury - but having been dairy/meat eaters for quite a long time, I guess that's normal!

Ive found watching YouTube videos of people making and eating vegan food is really helpful. It works up an appetite too rather than just looking at a picture and wishing you could just click your fingers - through watching these videos my husband and i realised how easy it is to make the meals we've had our whole life - but vegan!

Do any of you have any other tips? I found this YouTube channel which has some really great and delicious recipes, I was really shocked!!!

The channels called snakebite kitchen! Its made our life easier so I wanted to just share the recipes we have tried and tested with you all;

Pizza from scratch (surprisingly simple and easy) :

Cheesy tofu scramble (like scrambled egg but better!) :

Mac & Cheese (cant believe no dairy involved, kids loved this!) :

Caramelise onion houmous:

Toad in the hole (this is our new roast dinner, absolutely incredible!) :

Falafel (don't need to fry or blend!) :

The recipes are super easy to make - and the kids loveeee watching them, its like an entertainment show for me and dan and the kids! :') only a few videos though, hopefully they will make some more soon.

The kids are loving it but not really noticing the difference (except in their chocolate!) We found a chocolate alternative called moo free from Tesco and Asda which the kids LOVE!

We're not going completely vegan, but we are trying to eat a lot more plant based meals this month (and hopefully going forward), so veganish. We are doing it to try to eat more plants in our diet for health reasons mostly.

Do any of you have any other tips? Instead of cooking everything from scratch I've been using Simply Cook recipe boxes which have things like curry pastes, herbs and spices with the recipe card so I then only have to buy the veggies, pulses, rice and so on. I've selected the vegetarian range in my preferences, then it's easy to select the vegan recipes from the range, or adapt many of the vegetarian recipes. We also have some Allplants plant based meals in the freezer as back up.

I have some discount codes if anyone wants to try them out, they've made after work dinner prep much easier for me.
