Help! Vegan meal for 4 (and a quarter) meat eaters

My stupid mouth 🤦

I have wanted to cut out meat and dairy for ages, and have been making fairly wishy-washy efforts so far, barely eat meat or fish but haven't kicked dairy fully...anyway have come back from a weekend with my vegan friends feeling really inspired. I thought rather than put loads of pressure of screwing up on myself by trying to make the change perminant from now I'd start by trying to eat only plant based foods for 1 week to begin with, to see what challenges it throws up etc.

Anyway text DF to see if he fancied dinner this weekend...he says he's free. I suddenly realise and go "oh wait this will mess up my plant based week - can I cook instead??". This was meant as a bit of a joke as DF always wants to do the cooking and makes lots of cracks about being a meat eater through and through. I've cooked vegetarian for him very occasionally when it's just the two of us. DB and SIL chipped in and said they and DNewphew are free too. All now think I was serious about wanting to cook a vegan meal and are being usually encouraging about it. Have tried to back out but they're not having it.

Crap. Grin

I would have been up for trying something out just me and DF but with DP too that makes 5 people and a baby to cook for! So no pressure then.

Please please MN throw EVERY recipe you can think of at me because I'm only just finding my feet and currently only have like 4 tried and tested pb meals on rotation!

For a fledgling vegan cook, curries are a great option, how how about enchiladas made with quorn "chicken" pieces and red kidney beans (the darker packets are the vegan ones) served with salad and homemade guacamole. Another crowd pleaser is bean cassoulet which I serve with Linda McCartney's "chorizo" sausages (or regular sausages as we are a mixed household)

I would stay away from quorn. People don’t always react very well to it.

For some reason it’s only the quorn mince that causes problems around here! It gives me a runny tummy but DS was really sick for a day after we ate some. I looked at some runners magazines and it does seem to be a thing that some people get jippy tummies. The chunks are fine for us though

These are all great thanks. And thanks for the tip re. Wellington's I'll definitely save them for another day! Curry and flatbreads with saag aloo could be good?? Although that paella looks really really nice! Will pick one and do a trial tonight 🙏

How many do we think this serves? Has to be two right? So double up and a bit extra?

I made a kind of mushroom and veggie haggis for Christmas last year. Vegan puff pastry, 2 sheets, coat in the mushroom duxelles leaving about 3 cm round the edge add a cooked slightly cooked veggie haggis top with the other sheet and crimp together like a pastie. Brush with melted vegan butter and oat milk and bung in the oven. My strictly carnivore Dh stole loads of it

Well they all loved it! Made a huge great pot and it all went. And except for the geletin in my tablets I've had plant based all week Grin
