Does anyone have a recipe for a vegan 'cheese' sauce?

A one that can be used for things like macaroni 'cheese', lasagne, etc.

I cheat and use No-Moo melty when making a cheese sauce for vegan friends. It’s honestly delicious! I fry off onions, garlic and a little smoked paprika, turn the heat down low, add the ‘cheese’ and stir till melted, then thin out with almond or cashew milk.

I have done ‘cheese’ sauces several different ways.
You can do a normal roux with vegan butter, flour and soya milk (most like dairy for cooking for sure) then vegan cheese - the Tesco grated mozzarella works best as it melts properly - and loads of nutritional yeast (adds cheesiness and s depth of flavour) Actually you can just stir those into pasta directly with a bit of butter and milk and it creates a sauce.

I’ve made them by by blending a tin of white beans with some soya milk, miso paste, nooch and seasonings.

Lots of people make cashew based sauces, which are lovely but more expensive - try hot for food on YouTube for good recipes

This is the best vegan macaroni cheese sauce in existence, which is a bold statement Grin but I love it. It doesn’t taste the same as a macaroni cheese made with actual cheese, but it is really nice and creamy. For lasagne I just make a bechamel with almond milk and olive oil and put some nutrional yeast and plenty of salt in it to flavour it.

I have to admit that I was just thinking of doing what Rain has suggested and just making a vegan raux using fairy free milk, vegan cheese, etc but all the vegan cheeses I've come across have no protein in them.

I just wish they'd be done with it and make a soy based vegan cheese. Now imagine if Alpro made a dairy free cheese. Now that would be heaven

They do make soy based vegan cheeses? Loads if not most of them. Bute Island are mostly soy, Tesco ones are half soy. I only like soy based ones, not coconut based ones (most of the time) but no, none of them could count as a protein source, you have to think about getting the protein elsewhere. The blended white bean option is a good one if you want protein.
