Help with meal idea for guests

We are not a vegan family so other than falefal I don’t really know anything vegan.
We have 2 old friends coming for the weekend next weekend who turned vegan about a months ago.

I’d like to cook them a vegan dish but my husband is gluten/wheat intolerant and also soya intolerant. (My daughter is also soya intolerant)

One of the guests has a peanut allergy.

So is there a nice dish (something suitable for a we haven’t seen you for years meal) that doesn’t contain soya or wheat or peanuts?!!

Roasted vegetables with harissa and a couscous salad......

You could serve chicken and salmon on the side for non vegans.

Hasselback potatoes or crushed new potatoes.

My husband has recently gone vegetarian and it does take time to get your head around it.

How about a really nice vegetable curry banquet? Could make it special with a couple of different curries - say one coconutty korma style, one much hotter, lots of sides (saag aloo, lentil dhal, rice, poppadoms and chutney, onion bhajis etc.) That would all be super easy to do vegan (coconut cream instead of dairy cream in any creamy sauces - which tbh you’d probably have done anyway), no need to have any soya near any of that and as I understand it a fair number of rice types are gluten free, no issue with the saag aloo, poppadoms are made with gram flour so should be ok. It also wouldn’t feel like it was “missing” something iyswim?

Dessert - if you want one - could be a lovely exotic fruit salad with mangoes and perhaps coconut “whipped cream” - I made this when I had to be dairy free for a while - you get a couple of cans of full fat coconut milk, chill in the fridge for 24 hrs, open upside down and pour off the coconut water (which can be used for drinks), scoops out the coconut cream, which will have formered in a solid layer, whisk until smooth with a little vanilla extract (or seeds from a pod) and caster sugar to taste, chill again until ready to serve.

I normally do curries. Usually I do a Dahl, a vegetable curry, rice (just binging some cardamom pods in with the water makes it lovely), a salad and some chutneys. Maybe some chapatti for those who can have them. It can all be made in advance. Madhur Jaffery has some great recipes.

Dessert- mango sorbet always goes down well after a curry.

Or a nice risotto...mushroom or squash based.

Or bean chilli and rice. There's a really good recipe on the BBC good food website for double bean and roasted pepper chilli- it's a bit more involved than normal chilli and is delicious.

We normally chuck in a handful of cashews at the same time as the chickpeas too which makes it even nicer. Obviously, yoghurt is made from dairy and naans usually have milk in them, so we just have it with rice (and occasionally soya yoghurt).

check out some wagamama vegan recipes from their cookbook, you dab do a main and some sides ( gyozas etc)

Cashew milk curry, creamy and yummy with vegan almond and courgette koftas. Full of goodness but none of the banned stuff on your list I don't think. Easy to make but takes a little while.
