Help me veganise this cake, please.

We have been a vegetarian family for many years, DH is coeliac too.
One of our favourite cakes, great for puddings and snacks is an "almond and orange torte" The original recipe was from Good housekeeping. To make it you boil an orange for an hour and then blitz it in the food processor, whip up 3 eggs with 8oz sugar and then fold in the orange and 9 oz of ground almonds, with 1 tsp of baking powder. It is cooked for nearly an hour at 180c.

DS1 has been doing Veganuary and has decided he wants to remain vegan. I will be very sad if I can't modify this cake for him. I've read so many conflicting things about the best way to do this, can anyone help me?

Flax eggs and chia eggs apparently work very well. Can't remember the water to seed ratio but it will definitely be online. I've seen lots of recipes use them. I add flaxseed to my porridge and have to add more water because it really thickens it up.

The cake is always moist and quite dense so I can't see an experiment will cause a total disaster, I think I'll give it a go with the flax seeds I have ordered from Ocado this week and report back.

I've bought some vegan egg replacer powder from Holland & Barrett which has worked well in most cakes. It's a powder that you mix with water.

you could try whipping up the liquid from a can of chick peas
or get some orgran egg replacer. Brilliant stuff.

If you need the lightness of whipped egg white then you can use the liquid from a can of chickpeas (aquafaba) in the same way ie whip it with egg beaters until light and fluffy (I sometimes add a teaspoon of xanthum gum too).

Yes, have heard of aquafaba, I have that in mind for another recipe, part of me thinks it just sounds too incredible to real work, but I've heard reports it is very good.

It makes amazing meringues. You have to be careful as I've seen people on the aquafaba facebook groups saying that trying to replace more than 3 eggs with aquafaba doesn't work. As this recipe has 3 eggs i think it should.

it is fine with strong tastes. so with orange and almond should be great. I found it very odd when I used it with chocolate.
